Cooking method

I am reporting. The dough required exactly 2 tbsp. l. with heaps of flour and I added more sugar and a spoonful of rum, since I can't add alcohol anywhere else. I kneaded them at first for 5 minutes with a hook, and then more than 10 with a spatula until they gathered on a spatula. Since from Panettone's experience I know that such a dough looks liquid, and then gluten develops and ..... The dough was just fabulous. With caramel flavor. Feels exactly the same as Panettone, as I baked according to Angela's recipe. And I love this dough! I like its silky consistency, when the whole bun rises by the edge. And it looks damp, but it behaves great when folded with oiled hands.I baked them in small cupcake tins, so it turned out a lot. And then the molds ran out and I poured the rest of the dough into a mold for greasing. I made the fondant simply: I whipped up the whites remaining with sugar. Soaked orange leftovers cooked in sugar syrup after removing the zest and squeezing the juice.
The fibrous structure of the crumb did not work out for me. But I got baked sweet foam! Yes, yes .. you can't say otherwise. Very airy, all in holes.

We have a family recipe for "Napoleon," 100 years old at lunchtime. Very layered and delicious. It always worked out. But for several years in a row, instead of layered cakes - just sand, even if you crack. So far I threw it and I don't even look in his direction.
