Ingredients

minced meat (I had wild roe deer) 0.5KG
gelatin 1 sachet
salt taste
pepper taste
seasonings and spices (I had Armenian seasoning) taste
citrus zest (I had dried) 3 pinches
Garlic 1 large wedge
mustard (for serving)
greens (for decoration, I had parsley and celery)
berries (for decoration, I had red and white currants, raspberries)

Cooking method

  • Ingredients. The photo shows canned wild garlic. But in the course of cooking, I decided to replace it with zest (I suddenly wanted to). However, this is a reason to emphasize once again that you can endlessly experiment with ham.

  • Prepare the minced meat by mixing it with salt, pepper, your favorite seasonings, and adding chopped garlic, gelatin, and any citrus zest.

  • Cut off excess fat and supply vessels from the heart. Cut the heart into large enough pieces.

  • Mix the minced meat well with the heart pieces.

  • Cover the prepared ham with a plastic bag, and put the minced meat in it, tamping it tightly.

- how many grams of gelatin bag?
- if the veal heart is replaced with chicken hearts - how many grams to take?

Lily, there were 20 g of gelatin in my bag. But a 10 gram sachet will work as well. Some do not add gelatin at all, but minced meat is held together more tightly with it.
For a full ham, you need 1-1.5 kg of meat and minced meat. I had 0.5 kg of minced meat and a heart weighing about 700-800 g. From this calculation, and proceed. At the same time, the lump of meat should be at least not less than minced meat, and better even more. In addition, the construction of the ham allows it to be filled incompletely.
