Baked beetroot salad with sprats and pickled eggs

Ingredients

Baked young beets 2 pcs. small
Fresh cucumber 1 PC. average
Sprats 6 pcs.
Shallottes or red sweet onions. 2 pcs.
Red basil and young beet leaves handful
Chicken egg 1-2 pcs.
Borodino bread slices 8 pcs. small
Quail eggs marinated in soy sauce (optional) 3 pcs.
Unrefined vegetable oil 2 tbsp. l.
Sea or black salt
Lemon juice or wine vinegar 0.5 tsp

Cooking method

  • I propose a salad that may well replace a summer dinner or lunch, especially when there is still no full abundance of vegetables, but at the same time the body craves healthy, satisfying and light at the same time.
  • - Bake beets in foil until tender, cool and peel. (You can, of course, boil in a little water or steam)
  • - Grate boiled eggs on the bottom of the dish and distribute evenly.
  • - Beets and cucumber, cut into thin long slices with a vegetable peeler, roll up into rings and lay beautifully on top of grated eggs, alternating each other.
  • - Remove the excess oil from the sprats and place between the vegetables.
  • - Garnish the salad with basil leaves and young beets. Rucola is also good. Add shallots, chopped lengthwise.
  • - To add a chic and oriental touch, decorate the dish with peeled boiled quail eggs, cut into halves and pickled in soy sauce overnight.
  • - Sprinkle the salad with unrefined sunflower oil and a few drops of lemon juice or wine vinegar.
  • - Decorate with Borodino bread chips. For chips, it is necessary to cut Borodino bread into slices as thin as possible and dry in the oven until brown, that is, make crackers. Chips should shine through in the light, you can sprinkle them with garlic oil before drying. It is this thin cut that gives the salad beauty and originality.
