Cold red currant soup with tomato and avocado-spinach ice

Ingredients

For soup:
Ripe large tomato 1 PC.
Soy sauce (or coarse sea salt) 4 tbsp. l. (taste)
Ripe red currants, fresh or frozen 1 glass without a slide
For ice:
Ripe avocado 1/2 pcs.
Lime juice 1 tbsp. l.
Spinach with root 10 gr.
Homemade yogurt 1 tsp
Decoration:
Basil leaves
Spinach leaves
Frozen or chilled red currants

Cooking method

  • Ice making:
  • Grind avocado, lime juice, spinach, yogurt into a bowl of a blender with a knife or blender-leg to a state of mashed potatoes with large pieces. Salt to taste - I didn't salt.
  • Put the puree in ice cube trays and freeze.
  • Soup preparation:
  • Free the tomato from the skin. To do this, make a cruciform incision on the stem. Dip the tomato in boiling water for 1 minute. Remove, allow to cool and remove the skin.
  • Sort the red currant berries from the twigs. Defrost the frozen berries, save the juice. Freeze some of the berries or, on the contrary, do not defrost. Beat berries with juice, tomato and soy sauce with a blender until smooth. Pass the mass through a sieve if desired to completely free it from the seeds. However, we liked to just puree. Let the soup steep a little.
  • Dish decoration:
  • Pour soup onto a plate, garnish with basil leaves, spinach and frozen berries and ice.
  • My husband liked to sprinkle it with freshly ground black pepper.

At first, she was skeptical. I thought it would be solid sour. It turned out quite the opposite. Our berries are very large, varietal and juicy. The combination of soy sauce and tomato along with a sweet and sour berry and a hint of basil made a splash. Children, as always, were pleased with the ice. We will definitely repeat. Refreshing, healthy and delicious!
