Dried apricot sambuc

Ingredients

Dried apricots 250 g
Eggs 2 pcs.
Gelatin 1 tbsp. l.
Sugar 60 g
Fruit syrup 2-3 st. l.
Lemon juice 1 tsp

Cooking method

Wash dried apricots well and, if they are dry, pre-soak, and then boil over low heat until soft in an amount of water that slightly covers the layer of fruit.
Drain the broth, cool, and soak gelatin in half a glass until it swells.
We turn the boiled dried apricots into mashed potatoes with a blender and mix it with lemon juice and gelatin, dissolved in a water bath or in a microwave oven, without bringing it to a boil.
Beat the egg whites separately, adding sugar, until firm peaks and, continuing to beat, gradually add the apricot mass to them.
Divide the resulting thick foam into molds and send to the refrigerator until it solidifies.
Pour your favorite syrup over the finished sambuc. Bright, airy, fragrant dessert is ready to eat!

Note
