Festive pork sausage

Ingredients

lean pork 550 grams
low fat pork 750 grams
fatty pork 550 grams
ice water 190 gram
nitrite salt 36 grams
nutmeg taste
ground black pepper taste
peppercorn mixture 0.5 tsp
collagen casing diameter 45

Cooking method

  • Lean pork mode in small cubes.
  • Scroll low-fat pork in a meat grinder with the largest grill (I have 8 mm.)
  • Scroll the fatty pork on the smallest grill grate (I have 2 mm)
  • Crush the mixture of peppers in a mortar not into powder.
  • Mix salt and dry ingredients.
  • Mix the cubes and minced pork together. Add spices and salt.
  • We begin to knead. I do it with a spade in a combine.
  • Gradually add ice water.
  • The minced meat should be very cold.
  • If you feel that it is heating up, then put it in the freezer for 30 minutes.
  • When the minced meat has become sticky and threads have appeared, add the fat minced meat.
  • Stir until the fat is evenly distributed.
  • We cover and send to the refrigerator for a day.
  • Soak the albuminous membrane in water for a few minutes.
  • Take out, squeeze out water, tie one end.
  • Fill the casing with minced meat using a meat grinder with a special nozzle or a sausage syringe. We try not to get air. If hit, then pierce this place with a needle. You cannot make many punctures.
  • Hang the loaves at room temperature for a couple of hours.
  • Insert a thermometer probe into one of the loaves.
  • Put it in a cold oven.
  • The first hour, slowly raise the temperature in the oven to 50-60 degrees.
  • Gradually raise the temperature to 80 degrees.
  • Cook at this temperature until the temperature in the loaf reaches 68-70 degrees.
  • We get it. We make a cold shower or put it in a bowl with cold water. Let it cool.
  • We wipe it off. We put in the refrigerator for 12-20 hours.
  • We take out, cut and enjoy.
