Ingredients

Young beet 2 pcs. middle
Cucumber 3 medium
Radish 200 g
Boiled potatoes 3-4 pcs.
Boiled eggs 3 pcs.
Green onions, dill and other greens bunch
Apple vinegar 1-2 tsp
Salt and sugar taste
Vigorous mustard and grated horseradish 1 tsp.
Sour cream for serving taste
Boiled tongue (exactly in Smolensk with tongue) 200-300 g

Cooking method

  • I offer an almost classic chiller, but ennobled by the addition of boiled tongue (ideally, of course, beef) and a mixture of vigorous mustard and horseradish (which of course can be added to taste). Homemade apple cider vinegar imparts a delicate, aromatic sourness, while using young beets a pleasant sweetness.
  • Preparation
  • - Beets can be cooked in two ways. Wash the beets, peel, cut into small cubes, add salt, sugar and vinegar to it and boil until tender. Or, you can peel small beets and cook them whole in the same marinade, then grate or cut into thin strips. I like the second way more.
  • - Boil potatoes and eggs, cool, cut into cubes.
  • - Wash all the greens, dry, chop and grill with a crush and salt. Cut the radishes and cucumbers into thinner strips. Cut the tongue into small cubes.
  • - Add all the chopped vegetables to the crushed greens, add the beetroot, horseradish, mustard and season to taste. If there is not enough acid, I usually add lemon juice.
  • - Top with chopped herbs and sour cream to taste.
  • I like to replace part of the broth with a small amount of tan, ayran or low-fat kefir. In this case, you can not add sour cream if you want to get a less high-calorie dish.
  • Treat yourself to a delicious chill. Bon Appetit!
