Blueberry semifredo

Ingredients

Frozen blueberries 300 g
Gelatin 15 g
Sugar 150 g
Fat cream 100 g
Mascarpone 200 g
Eggs 2 pcs.
Salt pinch
Lemon juice a few drops
Transparent liquor 1-2 tbsp. l.
Vanilla sugar 1 tbsp. l.

Cooking method

  • Semifredo is a very popular dessert in Italy, which differs from traditional ice cream in that, firstly, it uses a variety of fillings - fruits, cookies, nuts, etc., and secondly, it does not stir during the freezing process and thirdly, it is served not too frozen, but slightly softened.
  • Defrost the blueberries and, draining the juice, soak the gelatin in it until it swells, and then dissolve it, without bringing it to a boil, in a water bath or in a microwave oven. We puree the blueberries with half the sugar with a blender, stir the gelatin in it and put half of the puree in a mold, send it to the freezer until it solidifies.
  • Combine the yolks with sugar and beat them thoroughly in a water bath over low heat until a thick white foam, until the sugar dissolves. Remove from heat, add mascarpone, liqueur and pre-whipped cream to the cooled yolks and whisk everything together again. Separately, until peaks, beat the whites with a pinch of salt, a few drops of lemon juice and vanilla sugar, and then, gently stirring in, combine them with the egg-creamy mass. Put half of the prepared mixture into a form with frozen blueberries in an even layer and send the form back to the freezer. After a while (it took me about an hour), the remaining blueberry jelly is poured over the almost frozen mass, again into the freezer, and twenty minutes later - the rest of the butter cream. Now you need to freeze the semifredo completely, but it is recommended to serve it slightly thawed. Although - this is done in Italy, but we can do it based on our own preferences.
