Shepherd's pies with onions

Ingredients

Bulb onions 3 pcs.
Red onion 1 PC.
Green onion 2 pcs.
Leek 100 g
Fresh parsley 1 bundle.
Soft cheese 200 gr.
Any broth 250 ml.
Butter 50 gr.
For the test:
Flour 500 gr.
Butter 200 gr.
Sour cream 200 gr.
Chicken egg 2 + 1 pcs.
Salt, black pepper

Cooking method

  • Cut the onion and red onion into strips.
  • Peel green onions and leeks and cut into half rings.
  • In a frying pan, fry onions and red onions in butter.
  • Add chopped green onions and leeks and fry.
  • Fry all the onions until tender and at the end add the broth, simmer for a few minutes.
  • Add grated cheese (I used sheep's cheese).
  • Add finely chopped parsley, mix everything.
  • We transfer to a separate dish.
  • Prepare the dough with the above ingredients. Allow 30 minutes to rest in the refrigerator (Puff pastry can be used if desired).
  • Pinch off the dough with balls the size of an egg, rolling each one to a thickness of 3 mm, put the filling in the middle. We bring the edges of the dough to the middle and pinch in the shape of an envelope.
  • Grease the pies with an egg, put on a baking sheet and put in an oven preheated to 200 degrees for 20 minutes.

  • If you will use salted cheese, do not overdo it with salt in the filling.
  • Pies with salted cheese go very well with sweet hot tea.

ZacharyYou are our breadwinner! How I love these pies! There are plenty of green onions, there is feta cheese, you need to bake. Definitely!

Zachary, as I saw the pies in the tape, I immediately realized that they were yours. You have your own, special handwriting! I also really love pies with onions. Only he is still quite small. as you grow up, I'll bake it right away. Thank you very much for the recipe!

Great! This is how similar the cuisine of the peoples of the Caucasus is (although you don’t quite "slap the Crimea" into the Caucasus, but still close by!) Literally all our peoples have pastries with cheese. Abkhazians have khachapuri, Ossetians have Ossetian pies, Azerbaijanis have kutabs, Georgians have khychins, Dagestanis have a miracle and many, many more. It's great that you spread national recipes in such detail. I would also, as a native of the Caucasus, add red pepper and garlic, so to improve appetite, so to speak!

Zachary, and you do uchpochmaki (triangles)? Your dough is very similar to triangle dough. It can be made yeast and simple. Did both. But I like simple dough more. My dough is different from yours. Now I'll try yours.

looks like triangle dough
Yes, this dough is universal for pies, although many people prefer to use only vegetable oil and eggs in the dough without using sour cream. Each housewife has her own recipe for pastry dough. Although now more and more often resort to the use of puff pastry

Yes, I tried it with puff pastry. Delicious! But you have to buy it. And with shops in our village there is a tension - there are no shops at all. And the most is somehow lazy to do. It seems difficult to me. Rather, the recipes that I used to make sl. dough, there were some unsuccessful ones. So I switched to a simple dough.

Have Abkhazians - Khachapuri, for Ossetians - Ossetian pies, for Azerbaijanis - kutabs, among Georgians - khychins, for the Dagestanis - a miracle and many, many more. It's great that you spread national recipes in such detail.

Nana, I'm sorry, but I want to correct you-

Abkhazians don't have khachapuri - acash
Georgians do not have khychins - khachapuri
and the khychins from Kabardino-Balkaria ...
