Cucumber parfait with mint

Ingredients

peeled cucumbers 200 g
gelatin 0.5 tbsp. l.
light honey 1 tbsp. l.
cream 20% fat 100 ml
fresh mint 10-15 leaves

Cooking method

  • Grate cucumbers on a fine grater. Pour the separated juice through a strainer, soak the gelatin in it. Dissolve the swollen gelatin, add 1 tbsp. l. with a slide of light honey. Mix with cream. Mix well.
  • Grind the cucumbers with a blender, combine with the gelatinous mass.
  • Cut the mint into small squares and add to the mixture. Remove everything in the cold until thick. Then transfer to the freezer and freeze.
  • Place again in the refrigerator for a short time before serving.
  • Served, garnished with a thin circle of cucumber and a slice of sun-dried tomato.
  • * The dessert turned out to be very sweet and delicate. No conflict of tastes.
  • First, I ground most of the mint together with the cucumbers with a blender, and added the rest by cutting. But the ground mint sold out in taste, but the pieces, falling on the tooth, were very refreshing.
