Ingredients

Dough:
dry yeast 1.5 tsp.
wheat flour c. from. 400 g
milk 220 g
yolks 2 pcs
salt 0.75 tsp
sugar 70 g
butter 60 g
Poppy filling:
poppy 150 g
milk 130 g
sugar 50 g
1/2 egg 30 g
Curd filling:
cottage cheese 250 g
sugar 60 g
vanilla sugar 10 g
corn starch 1-1.5 tbsp. l
1/2 egg 30 g

Cooking method

  • Dough:
  • Mix yeast with flour (leave 50 g of flour). Add warm milk, salt, sugar, yolks (you can replace it with one whole egg, but then reduce the amount of milk to 200 g). Knead for 7-8 minutes.
  • Add softened butter and remaining flour. Knead a soft, non-sticky dough.
  • Put the container with the dough in a large plastic bag (tie the ends of the bag) or tighten it with cling film.
  • Fermentation in the refrigerator for 10-12 hours.
  • Allow the dough to warm up at room temperature for an hour and a half before cutting.

  • Filling:
  • Grind poppy seeds in a coffee grinder. Bring the milk and sugar to a boil. Add poppy seeds. Cook, stirring occasionally, until all liquid has evaporated. Cool down. Beat the egg with a fork. Add half to the poppy filling, stir.
  • Rub the cottage cheese through a sieve. Add sugar, vanilla sugar, starch and the rest of the egg, stir until smooth.
  • Roll out the dough into a layer 5 mm thick. Put the poppy filling and then the curd filling.
  • Roll the dough into a roll. Connect the ends of the roll.
  • Transfer the roll to a baking dish. Proofing under the foil for an hour and a half.
  • Bake in an oven preheated to 220C (convection 200C) degrees for 10 minutes, then reduce the temperature to 180C (convection 160C) degrees and bring to readiness. Willingness to check with a wooden skewer. It should come out dry from the finished product. The total baking time for me was 50 minutes.
  • Leave in the mold for 10-15 minutes, then put on a wire rack and cool completely.
