Ingredients

active wheat leaven of 100% moisture based on lemon yeast 150 grams
wheat flour 1 or in / grade 325 gram
wheat flour c / z 50 grams
semolina of durum wheat with sprouts 50 grams
water 230 gram
dry yeast 1 gram
salt 10 grams
flax seed 50 grams
sunflower seed 50 grams

Cooking method

  • Bread Mod From all the ingredients. besides salt and seeds, knead the dough. Knead for 5 minutes. Add salt. Knead for another 5 minutes. Add the grains and mix them into the dough until completely distributed at low speed or by hand. The dough is soft, does not stick. The bowl is absolutely clean.
  • We put the dough to fermentation by tucking it into a ball in a greased container. Cover with foil. Fermentation for 120 minutes. Stretch-fold once halfway through the process.
  • Bread ModBread ModBread Mod Dough at the beginning, middle and end of fermentation.
  • Bread ModBread ModBread Mod We take out the dough. We form a loaf. Cut, braid, lay on top.
  • Bread ModBread Mod Proof on a sheet of parchment, covered with foil for 70 minutes.
  • We bake in an oven preheated to 240 degrees for the first 10 minutes with steam. We remove the steam, ventilate, lower the temperature to 180 degrees and bake until tender. I have a total baking time of 40 minutes.
  • We take it out, let it cool, cut it and enjoy.

Albina, I wrote in the second post about semolina. I gave a link to another bread that I baked. I think it can be replaced with semolina or durum semolina by adding some bran. You can generally remove this item by replacing c / s with flour. The bread is original, so the improvisation is complete.
I have never heard of this semolina before.stanllee shared a link to one organic store with her mill. There I saw.I took it for a test, I liked it as an additive.
