Ingredients

Dry yeast 2.5 tsp
Sugar 125 g
Vanilla sugar 30 g
Raisins 100 g
Salt 1.5 tsp.
Butter 185 g
Candied fruit 100 g
Flour psh. 650 g
Milk 255 ml
Egg (medium) 2 pcs
Glaze:
sugar or powder 120 g
lemon juice 0.5 tbsp. l.
egg (medium, only need protein) 1 PC

Cooking method

  • Bookmark order:
  • - we heat the milk, dissolve the butter. Mix everything together in a bowl: eggs, milk, butter, sugar, salt, sugar, vanilla sugar and pour into a bucket.
  • - sifted flour
  • - into the depression - yeast
  • Mode: \"Sweet bread\", crust - Light, weight - maximum, XL
  • While the first batch is in progress, soak in boiling water over raisins - 2-3 minutes, drain and spread on a paper towel to dry, finely chop candied fruits. We periodically control the first batch - as at this stage a lot of flour smears on the walls. After the signal, add raisins and candied fruits. At the end of baking, carefully take out the bucket and let it cool for 10 minutes. During this time, we prepare the glaze, if you have sugar, grind it into powder and knock down the dense glaze. We take the cake out of the bucket, put it on a stand and wave the icing. We decorate according to your taste.

  • PS: unlike option one - more lush, lighter crust, more tender crumb.

  • - Raisins can be soaked in cognac - will add aroma to baked goods and a pleasant bitter taste to raisins
  • - For an amateur - you can add grated lemon zest to the flour (~ 1 tsp) - will give a light yellowish tint to the crumb and a little lemon aroma (I have not tried it together with raisins in cognac)

Reduced the proportions by 1/5, put in half less raisins and candied fruits and still floated out of the bucket. Plus, the fruit throwing box itself has shifted the cap. On the program, Sweet bread was undercooked, baked on ordinary baking for another 20 minutes

Bessey, you can bookmark in reverse order: first, all liquids - butter, milk and eggs, then flour, yeast in the hole above the scapula, everything else on top.
About in the oven: I think no more than 180C (it is natural to warm the oven, and let the decomposed dough in the molds stand for about half an hour to rise, and then in the heated oven) 35-40 minutes will be needed for a paper form. Bessey, bookmark as you usually do for any bread in your oven. I was kneading on the Dough mode. At the end, I kneaded the raisins with my hands and divided the dough into four molds. The finished ones turned out to be just the size you need, about 400 grams each. Baked in a 180g mini oven for half an hour until a dry speck
