  • In the process of cooking, I thought that saj could also be used to boil cereals and legumes, so that it would be easier to grind them. This is if it is saj, and if it is just a smooth stone, then, of course, only for baking.

  • You can find many varieties of this bread recipe on the Internet, but I tried to create my own.
  • "Like barley cakes" - so I decided that it was using flour rather than whole grains and sourdough for opening.
  • I used the following ingredients:

  • The mixture of legumes was soaked for a day (it is possible for 6-8 hours). Washed out periodically. The resulting mixture is:

  • The sourdough was prepared in advance on wheat flour (sourdough + water + 2 tablespoons of flour). These are my measuring spoons:

Unfortunately, I was unable to insert a youtube video called "Saj flatbread" from "Don't spare the tea leaves" with Roman Gershuni, in which he tells how he baked a flatbread with saj that his mother sent him from Israel.
For me, this was the starting point for understanding how, after all, the prophet Ezekiel could bake bread.

Saj is a convex (or concave) removable metal sheet with legs. Like a wok. If you install it with the convex side up, then you can bake bread or cakes, and if the concave side is up, you can cook vegetables, meat, or you can soak and boil cereals. They also made it from clay.
And the simplest "saj" is a flat stone, which was placed on other pebbles, between which a fire was made.
They use it now.

I liked the taste of the bread, especially if it is made from boiled legumes or ground them into flour.
