Ingredients

PULISH:
Wheat flour (premium or first grade) 140 g
Water 140 g
Dzhzhi dry 1/16 tsp
DOUGH:
Wheat flour 210 g
Water 70 g
Dry yeast 1.5 g
Cuttlefish ink 17 g
Salt 7 g
Sesame seeds for sprinkling

Cooking method

  • Secondly, in the test, the specificity of ink practically disappears, but it has a wonderful effect on the dough, makes it elastic, pliable, and the bread itself is obtained only with a barely perceptible sea-side note and is perfect for all fish dishes, as well as for seafood.
  • And also bread is enriched with trace elements and iodine. It is eaten even by those who cannot stand the sauces with cuttlefish ink. Checked!
  • Sesame is a very useful additive (a lot has been written about it within the framework, including myself of the competition) and gives baguettes a beautiful look, working in the contrast of white with black.

  • Preparation
  • - Mix everything for pulish, cover with foil and leave for 12 hours at a temperature of 21-22 C.
  • - Mix everything for the dough and pulisch, except for salt, leave for autolysis for 15 minutes, then knead at low speed for 8 minutes, add salt before the end of the batch.
  • - Let the dough ferment for about 3-3.5 hours in a warm place.
  • - When the dough comes up, put on the table, fold once, let stand for 15 minutes. Divide into three parts, knead them well and form baguettes. Work without white flour, if it sticks, then grease your hands and table. oil. But the dough is very smooth and pleasant, no flour is required.
  • - Put the baguettes in baguette holders, greased with non-stick mixture. I just put a non-stick mat on the baguette holder. Let the baguettes rise for about an hour. Apply stripes to the baguettes with protein (preferably obliquely) and sprinkle generously with white or black sesame seeds.

  • - Bake at 230 C for 5 minutes with steam, then 12 at 180 C. Allow to cool on a wire rack.
  • Serve with fish dishes and soups. Spread deliciously with butter and sprinkle with fresh chili.
