Ingredients

Filling:
Fresh blueberry 200 g
Sugar 60 g
Cinnamon 1 tsp with top
Nutmeg 1/3 tsp
Lemon juice 1.5 tsp.
Dough:
Flour (sifted!) 380 g
Baking powder 2.5 tsp
Salt 1/3 tsp
Oil 260 g
Vanilla extract 1 ¼ tsp
Sugar 300 g
Eggs (medium) 3 pcs.
Sour cream (18-20% fat) 315 g
Finely grated zest of one lemon
Walnuts (or pecans) - roasted and not chopped too finely 50 g
Glaze:
Powdered sugar 100 g
Lemon juice 1 tbsp. l.
Optional:
Blueberries for "outdoor" decoration

Cooking method

  • In the original, the recipe is designed for a split form with a diameter of 9 inches (= 22.5 cm).
  • I didn't find such a shape, but I had a shape with a diameter of 26cm. Therefore, I counted the recipe (approximately + 20%). It turned out, it seems, right - the pie was delicious :-)
  • So:
  • Prepare the filling:
  • Wash and dry blueberries. Mix sugar, cinnamon and nutmeg, then add berries and sprinkle with lemon juice. Mix gently and set aside.

  • Preheat the oven to 175 degrees.
  • Prepare the mold: spread with butter and sprinkle with breadcrumbs.
  • Sift flour, baking powder and salt, mix and set aside.
  • In a large bowl, use a mixer to beat butter until tender. While whisking, add vanilla and sugar. Then add eggs one by one. Add sour cream and continue whisking only until the mixture is smooth.
  • Reduce mixer speed and add flour mixture. Stir only until the mixture is smooth. Add lemon zest and stir.
  • Put half of the dough in a mold and smooth the surface. Spoon the filling, leaving about 1.5 - 2 cm free to the edge.

  • Pour nuts into the remaining dough, mix, gently spoon into the mold and smooth the surface.
  • Bake for about 1 hour 10 minutes (plus / minus).
  • Remove from oven and let stand in the dish for about 15 minutes.

  • At this time, prepare the glaze: mix the powder and lemon juice. The glaze should be smooth and fairly thick. Add a couple of drops of hot water as needed.
  • Put the warm cake on a dish and immediately coat with icing.
