Cooking method

  • Hello everyone!!! Today we have a typical family recipe. This pie was prepared most often from the leftovers of cooked meat and potatoes. All this was folded into a clay mold, sprinkled with cheese and baked in a wood-burning oven. But the modern recipe has changed a little and acquired a test basis. Although, you can cook this cake without using dough.
  • We take a small homemade chicken, wash it and put it in a saucepan, fill it with water (in our case, we will use chicken legs) and put it to cook, remove the foam, add carrots, onions, bay leaves, dried roots and cook until the chicken is soft (so that the meat moves away from bones). In another saucepan, boil the peeled potatoes until soft. Remove the chicken from the broth, let the broth boil and turn it off. Put the chicken on a dish and let cool. Meanwhile, drain the potatoes and turn them into mashed potatoes (mashed potatoes as we do. There is no original combination). While everything cools down, let's do the dough. Pour flour (sifted) into a bowl, beat in eggs, pour in vegetable oil. Knead the elastic dough (if it is sticky, add flour. The dough should be soft, not sticky).
  • Knead the dough, cover with a bowl and let it rest. Finely chop the onion and fry in vegetable oil until golden brown. Chop a bunch of parsley (chop medium). Remove the cooled chicken meat from the bone and tear it into pieces with your hands. in a separate bowl, combine the meat, fried onions, parsley, pepper mixture and salt. Beat in 3 raw eggs and mix everything thoroughly. Roll out the dough into a circle (I do it with my hands, stretching the dough to the desired size) We cover the form with dough, the edges of the dough should hang down (I use a pizza form 30 cm in diameter with a side height of 3 cm). Put a layer of mashed potatoes about 1 cm thick on top of the dough. The next layer is the whole meat mixture. Smooth and spread the remaining mashed potatoes. Top three cheese (you can take any cheese you want). We raise the dough from the sides and form a rim. We put the pie in a preheated oven on the bottom heat at 180-190 degrees for 30-40 minutes until the dough and cheese are browned. We take out and let cool. We heat our chicken broth, pour it into a bowl or mug. Cut off a slice of the pie and enjoy.
