Ingredients

active lemon leaven (based on lemon yeast) 100% moisture 7 tbsp. spoons with a mountain

Cooking method

  • Lemon sourdough. How I did it written Brewed bread with lemon yeast.
  • The recipe from the series "by eye".
  • I took 7 spoons of ready-made active starter culture. I collected full spoons, one might say that with a slide.
  • Added water, salt, sugar. Stirred.
  • Gradually introduced flour. The dough should be thicker than the pancakes, like thick sour cream. The dough will become thinner during fermentation.
  • I put it in a warm place to roam. The process took 3 hours.
  • Lemon sourdough pancakes (lean) This is what the finished dough looked like.
  • Preheat a frying pan with oil.
  • We take the dough with a spoon gently, without stirring.
  • Fry over medium heat on both sides until tender.

The result is very tasty, airy pancakes. I was afraid that sourness would appear, because it was a long fermentation. But the fears were in vain. There was absolutely none.
