Cooking method

  • Mexican sweet bread "Conchas" resembles the seashell, after which it got its name. The loaves or buns are topped with a sugar dough like frosting seasoned with vanilla, cinnamon or chocolate. They are eaten in Mexico for breakfast or a late dinner known as merienda, a tradition dating back to the 16th century.
  • I fell in love with these buns once and for all. Firstly, they are unusual in appearance and in the method of production, secondly, amazingly tasty, thirdly, fragrant and high-calorie! What else does a healthy person need to be happy? Good taste and eye candy! Bake it, try it and you will be surprised. Buns undergo a metamorphosis in the manufacturing process: from ordinary buns they turn into amazing creatures. It all depends on which pattern you want to choose for application. Associations can be different - from a turtle to a globe!
  • The pattern should be applied with a razor blade or a very sharp knife.
  • And let you not be surprised by such "uneven grams" in the recipe - the owner is a master, it is possible that this is a way of self-expression of Mexican comrades in front of neighbors! I personally, diligently adhered to these proportions. The only thing I lacked for a full coverage of the topping, and without compromising the quality, I added a few small spoons of water and a couple of spoons of flour. You yourself will understand when you start doing! Of course, you have to tinker!

  • - For this we mix everything well, knead and leave it warm for an hour and a half. Then pluck pieces from the dough and add to the main dough.

  • We leave it warm for 30 minutes, and then send it to the refrigerator for 12-14 hours under the film.

As soon as the lump is formed, divide it into two parts and stir in cinnamon in one part, cocoa in the rest. We form two koloboks and put them in a bag in the refrigerator.
