Ingredients

turkey fillet 150 g
water (broth) 1.5 l
butter 100 g
onion 150 g
celery root 400-500 g
cream or sour cream 150-170 g
egg yolk 2 pcs.
processed cheese 2 pcs.
salt pepper taste

Cooking method

  • I spied the original recipe for this soup from Alla Kovalchuk from the TV show of the STB channel "Everything will be good." However, since my husband loves meat in the soup, I modernized it a little for myself.
  • For us personally, the soup is unusually tasty, with a sweet celery tint and a delicate creamy cheese taste, is simply amazing.
  • So, rinse the turkey, cut into small cubes, add water and put on medium heat, remove the foam when cooking.
  • While the meat is boiling, cut the onion into small cubes, and rub the celery root on a coarse grater.
  • Heat butter in a frying pan.
  • Fry the onions until transparent, then add the grated celery and simmer for another 8-10 minutes until the celery is soft.
  • Add the finished frying to the saucepan to the meat, salt a little and cook for about 10 minutes more.
  • At this time, mix the cream well with the yolks, add a little soup to this mixture and stir vigorously so that there are no lumps. Pour the whole cream mixture over the rest of the soup.
  • Bring to a boil and add grated curds.
  • Bring it to a boil again and cook for another 5 minutes until the cheese dissolves.
  • Salt and pepper to taste.
  • Cover with a lid, let it brew a little and serve.

Note

If the curds are not of very good quality, then they may not completely dissolve (like mine). This is not scary, the soup is still very tasty, the pieces of cheese will just be noticeable.
I think you can also replace turkey meat with chicken, or cook without meat at all (as in the original). But the pork will be too fat here.
