Italian dough bread with onions, tomatoes and bell peppers in the oven

Ingredients

wheat flour (total / sponge) 375 g (200)
water (total / dough) 220 ml (200)
salt 1 tsp
sugar 1 tbsp. l.
olive oil 3 tbsp. l.
bulb onions 1 PC.
dried (sun-dried) tomatoes 2 tbsp. l.
dried bell pepper 1 tbsp. l.
dry yeast (dough) 1/2 tsp

Cooking method

  • In the evening, knead a dough of 200 g of flour, 200 ml of water and 1/2 tsp. yeast. Leave for 12 hours in a warm place. In the morning add the remaining flour, water, salt and sugar to the dough. Mix and leave for 20 minutes. At this time, fry the finely chopped onion in the butter from the recipe. If the tomatoes are dried, grind them together with dried peppers. If dried, chop finely. Knead the dough, leave in a warm place for 30 minutes. Then add onions, tomatoes and peppers. Leave on for another 30 minutes. Stretch and fold the dough. Leave on for another 30 minutes. Shape the dough as you like. I have it just something in between a circle and a square. Put on a baking sheet, cover and let stand in a warm place for 1 hour. Bake for 10 minutes with steam at 220 * C, without steam for 20 minutes at 190 * C.

P.S. The crust color is dark, partly due to the slightly different baking mode, and partly due to the ground dried tomatoes. And the tomatoes were dried with rosemary.

The most remarkable thing about this bread was that exactly one week after baking this bread did not get stale or moldy. We just forgot it when we left the country house. I was very upset because the bread really turned out to be very good. Returning yesterday, the first thing I did was put my nose in the bag and was pleasantly surprised by what I saw. The bread is a little drier than fresh bread, but it still tastes good!
