Bread with rice and rosemary

Ingredients

wheat sourdough 100% moisture active 100g
rice sourdough 100% moisture active 50 grams
wheat flour 1 or in / grade 500 grams
water 260 gram
honey 30 grams
olive oil (other is possible) 1 tbsp. the spoon
boiled rice 100g
dry rosemary 1 tsp
salt 10 grams
dry yeast 1 gram

Cooking method

  • Wheat leaven.
  • Feed 6-8 hours before mixing.
  • Rice sourdough.
  • 1 day. I mixed 30 grams of rice flour + 30 grams of water + 0.5 teaspoon of honey. Left in a warm place for a day.
  • 2nd day. Added 60 grams of rice flour + 60 grams of water. Left in a warm place for a day.
  • 3rd day. I added half to the pancakes so as not to throw it away. For the second half, 100 grams of rice flour + 100 grams of water. After 8 hours, the leaven was the same as in the photo. She put it into bread.
  • Bread with rice and rosemary Starter cultures before kneading.
  • Dough
  • In a mixer bowl, mix the starter culture with water. Add honey, rice and flour mixed with yeast.
  • We start mixing at a slow speed.
  • After 5 minutes of kneading, add oil, rosemary and salt.
  • We continue kneading. The total mixing time is 15 minutes.
  • Bread with rice and rosemary The dough is soft, slightly sticky. Round with oiled hands and set to ferment. Fermentation for 120 minutes with one stir in the middle.

  • We take out the dough. We form any shape.

  • Temperature is 240 degrees.
  • After 15 minutes, remove the lid, lower the temperature to 180 degrees.
  • We bake until ready. My total baking time was 45 minutes.
  • We take it out, cool it on a wire rack, cut it and enjoy a delicious, aromatic bread.

As a spice, rosemary is not very popular with us, although it is widely cultivated in India, Africa, southern Europe, the Crimea and the Philippines. Adding rosemary to food improves digestion and increases gastric acid secretion.

The medicinal uses of rosemary are due to its ability to raise blood pressure, intensify heartbeat, and fight nervous tension and stress. Rosemary water extract also has tonic and choleretic properties. In combination with lavender, rosemary water infusion has a beneficial effect on people who have suffered a stroke, due to the fact that it has the ability to improve cerebral circulation, positively affect vision and memory.

Rosemary also helps to cope with colds, as its volatile substances effectively clean the indoor air from pathogenic microbes accumulating in it. Rosemary fights streptococci, staphylococci, yeast and Escherichia coli.

Annual shoots of rosemary and its leaves are used in folk medicine as an astringent for amenorrhea, as a tonic for impotence. It is used for the treatment of nervous disorders during the climacteric period as a sedative. For stomach cramps and pain in the heart, rosemary is used to relieve pain.

Rosemary is also used for rheumatism, thrombophlebitis, neuritis, leucorrhoea, parotitis, and also as a wound healing agent.

Gluten-free is very specific, I only have my husband and my mother! I only peel off the crusts, but I eat almost all bread like that, except for pure rye!
