Ingredients

Cooking method

  • Brew the tea leaves and leave to cool to 30 * C. Knead the dough from all ingredients, except for the oil and salt, add oil and salt after 10 minutes, knead for another 5 minutes. The dough seems a little dry, not sticky at all, but you don't need to add much liquid (maximum 10g). Leave to come under the film in a warm place for 1.5 hours without wrinkling. Round the dough and leave to rest for 10-15 minutes under the plastic wrap. Divide the dough into the required number of pieces. I divided them into 10 buns of 80g each. Form buns and proof in a warm place with steam for 1 hour.

  • While the buns are coming up, cook the caramelized onions. Melt the butter and add jam (you can jam or honey), add chopped onions and bring to a light golden color with continuous stirring and without a lid.

  • Grease the buns with a beaten egg and top with the cooled caramelized onions. Bake in a preheated oven (no steam) for 250 * C for 15 minutes, then reduce T to 190 * C and bake for another 30-40 minutes.

  • Delicious, fragrant, airy and healthy buns are ready!

Note

Considering that the onion is ready, it is better to put it 15 minutes before the end of baking (Thanks, + Gala +, for the suggestion!).
