Ingredients

Rice flour 100 g
Wheat flour 100 g
1 egg, rest water 80 gr.
Salt 0.5 tsp
Olive oil 1 tsp
For minced meat: beef 300 gr.
Pork 300 gr.
Bulb onions 1/2 head
Salt, pepper, spices Taste

Cooking method

  • The recipe for the minimum dose can be increased two to three times as desired.
  • Sift the flour, mix, put it in the bread maker in the order of the instructions for the bread maker (I have liquid first, then flour, then salt, oil) or with kneading hands on the table making a slide of flour and pouring liquid into the middle. We wrap the finished dough in plastic wrap and let it brew for 30 minutes.
  • Cooking minced beef and pork 1 to 1, half or a quarter of an onion, spices to taste. It is advisable to cool the minced meat for better modeling.
  • We roll out the dough, I roll it out on a dough roll from 6 to 3. Our dough has a low gluten (gluten) content. Therefore, roll out thicker than ordinary wheat dough. And we sculpt dumplings with a mold for dumplings or in the old fashioned way making circles with a glass. You can make ravioli (I show in the video) Limit only by your imagination.
  • Then you can immediately boil or freeze for future use!

The dish is designed for

40 dumplings ~ 900gr.

I did not notice any differences in taste, although I tried =) Same as in rice noodles. The only difference is in consistency, not as rubbery and elastic.
