Wheat-rye bread with sourdough Dessert

Ingredients

leaven:
active rye sourdough 100% moisture 30g
peeled rye flour 35g
water 19g
dough:
all leaven
peeled rye flour 150g
wheat flour 1 grade 300g
warm water 200-220g
whey (kefir, yogurt, yogurt) 100g

raisins 40g

Cooking method

  • Delicious and at the same time completely dietary and healthy bread. Update the starter the day before. Make a sourdough for bread, it will be quite dense. Leave it at room temperature for 8-10 hours, put in the refrigerator for 4-6 hours. Rinse the raisins and pour boiling water for 10-15 minutes, drain the water, dry the raisins. Grind the nuts a little by rolling with a rolling pin. I used apple jam, but any jam will do. I also added 1/4 teaspoon ground cardamom. Knead the dough from all ingredients, except for salt, raisins, nuts for 1 speed for 5 minutes, then for 3 more 5 minutes. Add salt and knead for another 4-5 minutes, add raisins, seeds and nuts and knead for another 2-3 minutes. The dough is soft, sticks to the hands, but sticks from the bottom and walls:

  • Leave the dough to rise in a warm place (28-30 * C) under the foil for 2 hours with 1 wrap in the middle. Divide into 2 parts for about 495g each. Fold-stretch each part, leave to rest for 15-20 minutes, form bars and place in baskets with the seam up. Leave to rise for 1.5 hours in a warm place with steam for 45-60 minutes. Tilt gently onto baking paper and cut. Bake in a preheated oven with steam for the first 15 minutes at T = 250 * C, and then without steam with falling heat at T = 210-190-170 * C for another 30-35 minutes.

Note

This bread, in spite of the fact that it contains a large amount of whole-grain rye flour, 1st grade flour, nuts, seeds and raisins, is still very airy. And although it is dessert, it will not add extra pounds precisely because of its ingredients. At the same time, it is prepared with sourdough, which reduces the amount of necessary yeast without losing its airiness. But all the components determine not only its amazing taste and aroma, but also its pronounced benefits. In addition, the introduction of whey, jam and honey significantly enriches its taste and contributes to the airiness of the crumb. I was based on this recipe - but I reworked it a lot.
