Lean mayonnaise, simple and quick

Ingredients

flour 3 tbsp. l. (with a slide)
water 0,5 l
vegetable oil (odorless) 300 BC
salt 1 tsp
sugar 1 dec. l.
mustard 2 tbsp. l.
vinegar (apple, grape) 3 tbsp. l.

Cooking method

  • The recipe impresses with its simplicity, speed and availability. It was cooked several times and not only during the fast.
  • Pour the flour, stirring with a whisk, with water and leave to swell for 2 hours (I did it without this exposure - I did not notice any difference).
  • Bring some water with flour to a boil (brew) and cool.
  • Put the whole custard mixture into a cup blender, turn it on and add:
  • - a thin stream of vegetable oil,
  • - salt, sugar, mustard.
  • Beat the whole thing, as soon as we find it in the blender bowl, add a mixture resembling mayonnaise in consistency:
  • -vinegar,
  • once again "punch" to homogeneity and ..... that's it.
  • With a blender, the whole process takes 5 minutes, you can beat with a mixer, then a little longer.

I immediately got it thick, well, just very thick. I brewed the flour with boiling water, then mixed it well and left it to cool for 45-50 minutes - maybe even a little more. I did 1/2 portions and all at once in a glass floor of a liter jar, that is, from a whole portion, almost 1 liter of mayonnaise will turn out. I think that the flour still needs to be left "alone" for at least half an hour, otherwise it may not seize immediately in hot flour / water.

I didn't really like the mayonnaise to taste "live" - ​​now I'll explain why. The whole thing in my mustard. I have it at home from cucumber pickle, to which was added aspirin and even before the fig ... Well, in short, my homemade mustard is just thermonuclear and a little bit with bitterness. it was this bitterness that was transferred into mayonnaise. I will repeat this recipe unambiguously, because I liked it very much (otherwise you won't find mayonnaise at all in our summer fasting posts, and this year, too, you have strained with it in stores). Only mustard will definitely take the store.

But by the way, in salads already a bitter taste is not felt at all ... In short, thanks again to the author !!!!
