flax seeds 20 g
salt 15 g
butter (margarine) 50 g
wheat bran 30 g
fermented rye malt 2 tsp
water (look at the moisture content of the flour) 310-320 g

Cooking method

  • 1. Mix the ingredients for the dough in the HP on the program "Dough for dumplings", leave overnight at room temperature.
  • 2. Mix all the ingredients for the dough, transfer to a greased bowl, leave for 1 hour for autolysis. After an hour, stretch - fold, leave for 4 hours. Wrinkle, rest for 10-15 minutes, shape, leave for the final rise for 2 hours.
  • 3. Bake for 10 minutes. with steam at a temperature of + 220C, 35-40 min. without steam at + 200C. Cool on a wire rack.
