Champignon and celery cream soup with aromatic rye croutons

Ingredients

Fresh champignons * 500 gr.
Celery root 1 PC.
Bulb onions 1 PC.
Olive oil 2 tbsp. l
Salt and pepper to taste
For croutons:
Rye (rye-wheat) bread 4 slices
Garlic 1 clove
Thyme 3-4 branches

Cooking method

  • Chop the onions. In a saucepan with a thick bottom, fry the onions in olive oil until transparent.
  • Peel the champignons, chop randomly and add to the onion in the pan. Fry for 5 minutes.
  • Peel and dice the celery root. Pour in with mushrooms and onions and fry for another 3 minutes.
  • Pour hot vegetable broth and just water into a saucepan, covering the mushrooms and vegetables. Add salt and pepper to taste. Cook over medium heat until mushrooms are cooked.
  • While the soup is boiling, prepare rye croutons.
  • Grate slices of rye or rye-wheat bread with garlic, sprinkle with thyme leaves and bake in the oven at 160 ° C for 5-7 minutes. (You can also use a microwave oven, toaster, airfryer or air fryer.) Then just break the croutons with your hands into convenient pieces.
  • Grind the finished soup with a blender into a homogeneous mass. If the soup turns out to be very thick, you can add more hot broth or water ** (not in fasting or for those who are not fasting, you can dilute the soup with cream).
  • Pour the puree soup into bowls and serve with rye croutons.
