Garlic and Rosemary Buns

Ingredients

for 6 large buns:
Plain flour
(up to about 3, it took me 2.5 (310g))
2 1/2 cups
Warm water (43C / 110F) 1/3 cup
Milk 125 ml
Salt 1/2 tsp
Sugar 2 tbsp. l.
Butter 1 tbsp. l.
Dry yeast 1 pack (7g)
Eggs at room temperature 2 pcs.
Fresh rosemary, chopped 2 tsp
Freshly grated Parmesan 2 tbsp. l.
Garlic, chop 2 cloves
Poppy seeds for sprinkling

Cooking method

  • 1. In a large bowl, combine 3 cups flour and top with yeast. Mix and set aside, while in a saucepan, combine milk and small pieces of butter, sugar and salt. Heat the mixture over low heat until almost all the oil has melted, but do not bring the mixture to a boil! Cool down.

  • 2. Pour the milk into a large bowl. Dissolve yeast in 1/3 cup of warm water and add to the milk mixture. Mix with one egg, then add rosemary, garlic and one tablespoon of Parmesan. Add enough flour to make a soft, homogeneous dough. Knead it for 7-8 minutes. Place dough in a greased bowl and leave to rise for 1 1/2 hours or until doubled in size.

  • 3. To form buns: crush the dough with your hands and transfer to the work surface. Roll into a cylinder and cut into even pieces. Roll up balls. and leave to rest for 10 minutes, covered with a light tea towel. Then, using a rolling pin, roll them into flat cakes with a diameter of 9-10 cm. Spread the flat cakes on a greased baking sheet or sprinkled with flour.

  • 4. Cover a baking sheet with either waxed or parchment paper and let it rise almost twice (30-40 minutes).

  • 5. Preheat the stove to 350 F / 180C. Lightly grease the buns with yolk, whipped with water and bake for 10 minutes. After that, they must be removed from the oven, quickly greased again with the egg mixture, sprinkled with poppy seeds and the remaining cheese on top and returned to bake for another 7-10 minutes until golden brown. Remove from the oven and cool on a metal wire rack.
