Hello! Can you please tell me why when baking eclairs (profiteroles) you get a raw middle? I have tried many recipes, but the result is always the same - they rise well, tasty, but before filling the eclairs with cream, you have to choose a damp center. Maybe it's okay?

Not about baked to the end, you need to dry it longer, reduce the temperature and keep it in the oven for 15-20 minutes. The inside should not be wet
