Oat bran pancakes (no flour)

Ingredients

Bran (oat!) 12 Art. l. (regular)
Drinking yoghurt (MK sourdough, kefir) 500 ml
Corn starch 3 tbsp. l.
Eggs 3 pcs.
Salt 1 tsp
Vegetable oil (for greasing a frying pan) 5 ml.

Cooking method

Oat bran pancakes are the staple of the Ducan diet. Followers of this diet claim that they can be eaten at any time. And in Paris, packs of such pancakes have been sold in every supermarket in recent years. I am not an adherent of this diet, but I tried to make these pancakes. Bribed by the fact that they are baked on oat bran, which can work wonders with our body with their regular use. They, like all other bran, are primarily slow carbohydrates. Accordingly, they break down slowly, maintaining blood glucose levels at a constant level for a long time. The glucose level does not drop - there is no feeling of hunger. In addition, the calorie content of oat bran is much lower than the calorie content of flour and oatmeal. So, for weight loss, the benefits of oat bran are significant! If you, dear bakers, are imbued with the usefulness of this dish, then I suggest taking note of this recipe.
It is advised to add lactic sourdough or zero fat kefir to the pancake mixture. Since I myself make homemade drinking yoghurt, I took it. The bran, due to its size, does not allow a homogeneous dough to be obtained. Due to this, the pancakes are thicker and smaller in diameter than the usual pancakes on wheat flour.
Oat bran pancakes (no flour)
So, take the oat bran. I draw your attention to the fact that we take exactly oat bran, not flakes. And wheat bran won't work in this recipe either!

and leave for 30 minutes to swell.

After 30 minutes, add eggs, starch, salt, if you like, then sugar to this mass (I added 1 tbsp. L.).

We mix. The mixture is ready to bake.

We heat the frying pan, drip oil on it and rub it with a culinary brush along the plane.

Pour a thick mass onto the center of the pan and try to distribute it in a circle with a diameter of 15 cm.
Oat bran pancakes (no flour)
I distributed the first pancakes all over the pan, but they did not turn over well. Therefore, I began to make the next pancakes less, and they turned over beautifully.
Oat bran pancakes (no flour)
We bake pancakes for a couple of minutes on each side. Pancakes come out plump. They do not fold well - it is difficult to do this with bran without breaking the pancake.
Oat bran pancakes (no flour)
That's it, our pancakes are ready.

In fact, those who follow the Ducan diet eat these pancakes without anything. We ate them with sour cream.
Oat bran pancakes (no flour)
Of course, the taste of these pancakes is different from the taste of the usual wheat flour pancakes. But already on the second pancake I got used to this taste, and I ate the third with pleasure. The feeling of fullness came unusually quickly, as the nutritionists promised, and continued until the end of the day. And I was also surprised by the lack of heaviness, which usually occurs after traditional pancakes with wheat flour.
By the way, nutritionists are advised to consume 1-3 tbsp. l. oat bran a day. Having eaten 3 pancakes, I did not exceed the norm. So now I am going to bake these pancakes periodically.

The dish is designed for

10 - 12 pieces

Time for preparing:

1 hour 15 minutes

Note

If we talk about the composition of oat bran, then you can list everything useful for a long time. In addition to useful carbohydrates and dietary fiber, they contain vegetable proteins and fats - also with a complex and rich composition. There are many amino acids in proteins - 14 essential and 9 nonessential; in fats - fatty acids: saturated, monounsaturated and polyunsaturated - the latter most of all; and carbohydrates also contain many different sugars; vitamins - A, beta-carotene, D, E, K, C, groups B, H, PP; there is lycopene, lutein and zeaxanthin; minerals - potassium, calcium, silicon, magnesium, sodium, sulfur, phosphorus, chlorine, boron, vanadium, iron, manganese, cobalt, iodine, molybdenum, copper, nickel, selenium, fluorine, chromium, zinc.
In the 1980s, studies were carried out in the United States that proved that regular consumption of bran lowered cholesterol levels. And a study in Australia has found a link between regular consumption of oat bran and diabetes prevention. This is due to the stabilization of blood sugar levels. British scientists have proven that oat bran in the diet is an excellent prevention of malignant colon tumors
Although oat bran is very useful for both healthy and sick people, it should be used as a food supplement. If you use bran for a long time and in large quantities, then you can get additional health problems - for example, disrupt digestion, so it is better to add bran to different dishes, and eat 1-3 tbsp. l. in a day. Do not use them with exacerbations of gastrointestinal diseases ( 🔗).
Thank you for the useful recipe lada l09 🔗.

Olenka, yes, no flour at all. But there is starch - 3 tbsp. l. But the Ducanites themselves allow themselves to eat it, so I also allowed myself to do it.
Thank you, Olenka, for your attention! I hope these pancakes will cope with their hopes :)!

Olenka, about wheat they write that they are rude and such a trick will not work with them. I specifically asked my husband to buy these. if he found it in our village, then in your big one you will find it even more!

And, what is especially regrettable, oat bran is eaten at home ... You need to bake.
Thank you, Lyudochka! No really, thanks!

lappl1,
The "dukans" still have a recipe for the "bread" of their oat bran with cottage cheese and egg. It tastes like a weird but delicious cupcake.
Thanks for the recipe, I will definitely try to cook it.
What about the starch in the composition? It seems that this is not quite a system product.

Eh, Lyudochka, what are you doing with us. I thought that all the pancake Wishlist was over, but no)))
I’ll cook these pancakes for sure, I’ve already checked my cupboards, I don’t have any oat bran, only wheat ones, otherwise I would cook it today. I move the recipe to Wishlist # 1. thank you for the recipe

mur_myau, starch from Dyukanovites is allowed in min. quantities, but it seems corn

echeva,
Yes? I'll know. I have a table, it just says "starch" in the list of unwanted products.

As an adherent of Sybarite, I immediately replaced the starch with an equal amount of chickpea flour. She made the first portion unsweetened in the form of pancakes (in Orios), then added sweetener and spread the dough until a thin pancake. I'll try right now.
We liked the thin and sweet ones more. Fourfold.
The only thing is that I didn't have sour milk, and I diluted it with milk. And I added soda and vinegar. And everything else is prescription
Even not enough Maybe vanilla aroma

And I salted, I always add salt to the dough. And in order to comply with all the canons of usefulness, this carbohydrate dish must be consumed with fresh vegetables - wrapped in a pancake or in the form of a salad. Probably, the topic will be the sauce Cottage cheese with linseed oil (Quark mit Leinoel) NataliARH.

kubanochka, mur_myau, Olya_, nakapustina, echeva, + Gala +, Anna1957, Natalia-65, Rada-dms, thank you, dear girls, for your attention to the recipe, your feedback and the desire to bake bran pancakes!
Anna1957, Anechka, thank you for already baking them! And the fact that something is missing in the pancakes, so I'll tell you why - they definitely lack baking! But this will be a completely different option, not a dietary one. Therefore, when I baked these pancakes, I was not tuned in to the fact that as a result I would get an butter pancake pancake that would melt in my mouth. Of course, they are not suitable for Shrovetide at all. They are not suitable for those who are used to meeting Shrovetide with fat and sweet pancakes. And this option is suitable for those who want to celebrate Shrovetide and not harm their figure / health, as well as for everyday use, when we purposefully want to take care of our figure and health, and not feel like criminals that we ate pancakes, and tomorrow we have to starve to lose weight. I baked these pancakes after the New Year, Christmas and Epiphany holidays. When the body has already protested even the usual products. And for 2 weeks of their almost daily use, I felt in my usual form.
So, forgive me, dear girls, if you expected a Maslenitsa treat from me, but you got a completely unusual taste. But I, like, honestly wrote in the recipe that this is a dietary product. So, who has not yet baked these pancakes, please think about what you want to taste. If the usual pancake, then this recipe is not for you! If you want to bake a healthy product, in principle, with good taste, then you can try baking. But I warn you that a one-time intake of these pancakes will not make the difference. It takes 2 - 3 weeks to feel the effect of such baking.
Anna1957
Lud, I didn’t expect a pancake, I haven’t been eating anything made of white wheat flour and sugar for more than six months. I even dressed your recipe, replacing starch with chickpea flour. So it is not necessary to ask for forgiveness, but to accept gratitude from people observing the principles of healthy eating.

You are a heroine, Anechka! I ought to take an example from you! If I can somehow live without sugar, then without flour I still cannot. Here, bran everywhere and put it - in bread, rolls, pancakes.
Thank you, Anya, once again for trying to bake these pancakes. It will be very interesting for me to know about the result if you dress them ...

I bake for myself from CH and rye flour, and muffins from chickpea puree and less often from chickpea flour (expensive and not always the case). Who does not know what my muffins are made of - will never suspect that they lack flour. My son, spoiled by a variety of pastries, even asks to bake them. Loksa recently tried it and liked it too. I make nuts-crunches from it. In short, the first, second and compote

No, I don't know how, and I have no time. I'm more of an epistolary genre. And there are a lot of Sybaritic, truly beautiful recipes on our website at Alexandra's. But, unfortunately, they are unpopular and little attended. And I myself have learned a lot of interesting things on the Sybarite website of Elena Stoyanova (by the way, on the recommendation of Alexandra). The result is -17kg.

Anna1957, Anya, yes ... And I'm a sinner. Sometimes I visit Alexandra and I myself see that her recipes are not as popular as they should be on our bakery site! Thanks for reminding me! Post - it's time to study the topic of Alexandra.

You are smart, Anechka! I know what it is to lose pounds! There was a case. I have been eating everything for a long time, but little by little and often. And I drink a lot of water. I can't imagine myself without her. And I will definitely go to Stoyanova to study. Thanks for the tip!

Lyudochka, thank you very much for this recipe! It is not only healthy, but also delicious. Today I baked for a test. I baked pancakes in a pancake pan. I didn't have kefir, I added sour cream, milk, a little vanilla and baking powder. My husband really liked it. I ordered more for tomorrow. I'm going to buy some bran and bake some more. Thanks again!
Albina
It's a pity there are no oat bran, I would knead it.
lappl1
Albina, husband buys oat bran at the pharmacy. Just make sure that they are light and large like in my first photo. And then the last time, under the guise of oat bran, he brought a package with a bag similar to wheat in smell, color and size - small and dark.

Well, the fact that they replaced kefir with sour cream is even good! Sour cream is also useful! Thank you very much for your feedback! I hope your family's health will become even stronger with the help of this recipe! Enjoy making your pancakes.

Lyudochka, the most useful pancakes, and we sell flour from oat bran, it is very suitable here, it looks like ordinary flour
lappl1
Natasha, thank you for your feedback on these pancakes! You know, in some recipes for such pancakes, the bran was specially ground in a coffee grinder so that the pancakes were elastic! Therefore, if you bake pancakes from ready-made bran flour, then the process will be simplified. We must try to make those too. Thank you for the idea, Natasha.

This is the first pancake recipe in my life, which I did not succeed 100%. Since I switched to proper nutrition, oatmeal became a frequent delicacy for breakfast .. I tried different recipes, with milk, egg, and oat bran, it was always baked perfectly. Yesterday I decided to try this one on kefir. She absolutely could not turn a single one, no matter how thick it was. When trying to turn everything turned into a lump. There was a feeling that it was from kefir, he did not tie it together, but fell apart and remained a mess. Despite the fact that I bake wheat pancakes on kefir. I had to throw everything into the trash and make a standard recipe for milk, which is baked and turned over even with the thinnest version ... So, alas, these pancakes were lumpy from first to last ...

Wow, how insulting. And I reread the topic, saw that I also baked them, but in milk. And everything worked out. By the way, after new experiments on the forum, you can try to replace eggs with chickpea broth - maybe it will also add an additional binder note. Although I do not limit eggs in my diet, there are many people who cannot stand eggs.
lappl1
Playful, Oksana, it's a shame that you had a bad experience in making these pancakes. I don't even know what the reason is. The photo in the recipe shows every step of their preparation. As you can see, everything works out. I baked them many times, and from oat bran from different manufacturers, on yogurt and kefir, with sour cream diluted with milk. Everything always works out. Yes, pancakes do not turn out thin, but I talked about this in the recipe.
I guess the problem might be in the pan, or the size of the pancake, or the consistency of the dough. I'm not sure that you will dare to repeat the experiment after failure. But still, I wish you good luck in the culinary field and not only!

I'll write a more sober review than many of the previous ones. I made such pancakes, however, like oat bran bread. Yes, the taste is specific, but edible.
I would like to draw the attention of users to the misconceptions in the first post, which are quite common for inexperienced healthy lifestyle neophytes.
Calorie content (naturally, due to carbohydrates) oat bran insignificantly less than white wheat flour.
For reference - oat bran (I look at a pack of bran integral (whole, that means), Portuguese brand diets) for 100 g 358 kcal.
White (confectionery) wheat flour - 364 kcal.
Whole grain (integral) wheat flour - 339 kcal.
Adding starch according to the recipe (and this is necessary) - you get pancakes no less high-calorie than ordinary ones.
Bran is valuable in fiber, valuable in protein (oddly enough, it is there).
But those who are losing weight should consume this product with great care.
Preferably in the morning.

Personally, I finish my pack in a different form - I interfere with 2 tbsp. spoons of bran with natural yogurt, let it swell, finely cut a couple of dates into this mass (only 50 kcal for sweetness), put the whole thing in a beautiful transparent bowl and on top a layer of any sour and not very (they are less high-calorie) fresh fruits in the form of puree ... It's beautiful, it's great and delicious... I cook for breakfast in the evening.
Life hack for those who are losing weight and adhere to a healthy lifestyle.
