Pancakes from Luda

Ingredients

Wheat flour 250 gr.
Semolina 250 gr.
Dry yeast 7 gr.
Sugar (with a slide) 2 tbsp. l. (regular)
Salt 0.5 tbsp. l. from HP
Baking powder 0.5 tsp from HP
Chicken egg 3 pcs.
Water 0.5 l.
Milk 0.5 l.

Cooking method

I found the recipe for these pancakes in LJ from Luda (mariana_aga), known to many bakers, until she once again deleted it. Since then, I bake these pancakes when I need to wrap the filling in them, because these pancakes are kind of made for that. The pancakes are soft, tender, elastic, ruddy, with a lace frill and a neutral taste. This is such a successful recipe that you can bake both thin and not very thin pancakes using it. Moreover, any diameter. It depends on how much dough you pour into the pan. Although the pancakes are yeast, a baking powder is added to the dough. Here is what Lyuda writes about this:

In all cases when you see two baking powder in recipes: yeast and soda (baking powder), soda at first glance seems superfluous, because it is not used there for loosening the dough! Well, yes, not for loosening, in any case, not for loosening at the time of creation, kneading the dough. It becomes much more delicate, creamy in consistency, and the products acquire a different color and taste. When soda is found in yeast dough recipes, it helps create ultra-fluffy products with a sweet fermented dough aroma: buns, waffles, pancakes, because the soda looses the dough as the dough heats up, i.e. when the yeast is dying and more. they are not capable of producing gas. In most cases, soda is added for the color scheme, for the color of the crust, because pale products (cookies, biscuits, the same pancakes or waffles) are simply not as fragrant and tasty as products with a well-tinted golden brown crust that can be obtained even when baking products at low T, if there is soda in the dough.

And there is. Pancakes according to this recipe have a bubbly structure and a very rich ruddy color.

So, we prepare the dough.

We mix flour, semolina, dry yeast, baking powder, sugar and salt. If the yeast is dry active, then it must first be activated for 10 minutes in warm water (150 ml) with the addition of 1 tbsp. l. sugar, taking them from the total. If the yeast is dry fast-acting (I have one), then just mix all the dry ingredients together.

Beat the eggs in a separate container until smooth.

Add warm milk and water to the eggs and beat again.

Combine the egg-milk mixture with the dry mixture. Stir all the ingredients with a whisk until smooth and leave in a warm place for 45 minutes. The dough does not increase in volume, despite the fact that it contains yeast. It only thickens.

We bake pancakes. If the pan is normal, grease it with oil. If a special pancake with a non-stick coating, then you do not need to grease. I baked in a cast iron pan with a diameter of 16 cm.

In the baking process, you may need to add 1 - 2 tablespoons of warm water to the dough a couple of times, since due to the swelling of the semolina towards the middle of baking, it thickens a little.

If the pancakes are intended for wrapping the filling in them, then put them in a stack and cover with a deep bowl so that the pancakes do not wind up and become soft and elastic.

Qataef Arabic pancakes have a similar dough (with yeast and baking powder). So, I pointed out there that it ripens very quickly. And this dough also takes only 45 minutes.
