Airy lace pancakes with yeast dough

Ingredients

Milk 850 ml
Dry yeast 4-10 g
Chicken eggs 2 pcs.
Wheat flour 500 g
Sugar 2 tbsp. l.
Salt 1 tsp
Vegetable oil 2 tbsp. l.

Cooking method

  • We take 100 ml of warm milk, pour a pinch of salt and 1 teaspoon of granulated sugar there, on top from 4 to 10 g of dry fast-acting yeast.
  • The original was 10 g, I did not risk so much and poured 4 grams.
  • Airy lace pancakes with yeast dough
  • Stir and leave alone for 30 minutes.
  • In 500 g of flour, add a teaspoon of salt and 2 tablespoons of granulated sugar, 2 eggs, 750 ml of warm milk and all well-suited dough, stir thoroughly, add 2 tablespoons of vegetable oil.
  • Cover the dish with the dough with a lid and put it in a warm place for 2 hours. Every 30 minutes, we settle the dough, whipping it well with a broom, but 30 minutes before the end of the process, you should not interfere too much.
  • By the end of the process, the dough will bubble a lot - that's what we need!

  • The dough should not turn out very fluid, and when you pick up the dough with a ladle, it should lie with a good foam cap. Pour into a frying pan and distribute with a special wooden stick, after wetting it thoroughly.
  • We bake - if on the stove, then over moderate heat and in a good pancake pan.
  • If using a crepe maker with a thermostat, then on the 2nd level.
  • It is better to grease the working surface of the pan and crepe maker a little with vegetable oil.
  • Pancakes on dough with dry yeast.

Note

I used to bake pancakes, mostly yeast-free - with yogurt, carbonated water, milk. I also baked on self-grown sourdough. And then I decided to bake with yeast - my main pancake eaters really liked it!
