Ingredients

Cake:
Flour 150 g
Sugar 100 g
Eggs 3 pcs
Butter or margarine 75 g
Milk 1 tbsp. l.
Soda + vinegar 1/3 tsp
Cream:
Cream 30% 500 ml
Gelatin 11 g
Milk 50 ml
Cherry jam (replaced with red currant jam) 120-170 g
Rum 2 tbsp. l.
Bitter chocolate 100 g
Condensed milk 80 g
Marzipan: (210 g)
Raw almonds 110 g
Sugar 60 g
Egg 1 PC
Almond essence or rum
Lemon juice 1 tsp

Cooking method

  • Stеrntaler-Kuchen mit Schokosahne is an original cake for the Advent period or festive Christmas table.
  • So, let's begin.
  • Marzipan:
  • If you are not lucky enough to buy marzipan, you can cook it yourself. To do this, pour boiling water over the almonds for 10 minutes, peel them, dry them in the oven at 60C for about 5 minutes and grind them with a blender.
  • Beat the egg lightly with sugar and simmer over low heat for 3-4 minutes.
  • Add almonds, lemon juice, essence to the egg mass and boil for another 1-2 minutes.
  • Put on a board sprinkled with powdered sugar. If the mixture crumbles, add water. If too sticky, add powder. Wrap in plastic wrap, send to refrigerator. Before assembling the cake, roll out a layer 2-3 mm thick, cut out the stars, set aside the trim
  • Cake:
  • Beat sugar, milk, eggs, butter for 2 minutes, add sifted flour with baking powder, stir until smooth.
  • Put on a baking sheet. The approximate size is 30 x 40 cm (taking into account the trimming, I got 30 x 35 cm). Bake in a preheated oven at 1700C for about 10 minutes.
  • Cut into 5 strips along the long side with the following dimensions (stripe width) - 11, 9, 7, 5, 3 cm.
  • Cream:
  • Melt chocolate in a water bath, add condensed milk, cool.
  • Whisk the chilled cream, add the chocolate mass, then the gelatin, stirring constantly. Pre-soak gelatin, dissolve in a water bath with milk.
  • Assembly:
  • Spread the dough strips with jam, then put the marzipan scraps, top with the cream. Put the widest strip on a tray, then in descending order.
  • Coat the finished cake with cream, put the rest of the cream in a pastry bag, plant the stars. Send it to the refrigerator for half an hour if the stars are not frozen yet. Decorate with marzipan stars. Done! We leave for impregnation for 2 hours.

Note

The recipe uses Dr. Oetker + 100 ml water. I replaced it with chocolate and condensed milk.
I liked this marzipan recipe more than previous - this one is more elastic.
