Fancy pumpkin pie

Ingredients

pumpkin 600g
sugar 1 glass
honey 2 tbsp. l
orange 1 PC.
cognac 2-3 st. l
ground cinnamon 2/3 tsp
ground cloves 1/4 tsp
raisins 1 glass
flour 300 g
baking powder 2 tsp
sesame 1-2 tbsp. l

Cooking method

  • Peel the pumpkin and cut into small cubes (about 1x1 cm). Add sugar, honey, cognac, orange zest and juice, cinnamon, cloves. Mix everything well. Leave for 5-10 minutes to melt sugar and honey and pumpkin to give juice.
  • In the meantime, grease the pan and dust lightly with flour.
  • Rinse the raisins and pat dry on a towel.
  • Sift flour and combine with baking powder.
  • Add raisins, stir. Add flour and stir until smooth.
  • Put the dough into a mold, flatten and sprinkle with sesame seeds.
  • Bake in the oven at 180 g for 1 hour 10 minutes or until tender, depending on the characteristics of your oven.

Note

The pie turns out to be very aromatic and unusual in taste. It looks a bit like a gingerbread, apparently because of the cinnamon drip.
The pumpkin in the pie is not felt at all.
It is better to use fresh pumpkin, frozen gives excess moisture and the cake comes out wet.

The baking powder loosens the dough and makes the cake rather porous.
The main thing is to bake until tender. I check this way: I press my finger on the crust from above, if it springs well, there is no hole left, then it is baked. And if a dimple remains or does not spring well, I leave it in the oven for 10-15 minutes.
It is better to overexpose this cake in the oven than undercooked.
In general, I check all the pies this way. The toothpick method, in my opinion, will not work if the pie has a filling, apples for example. A toothpick will hit the apple and come out of the dough wet.
