Cooking method

  • Girls and Boys, let YOU suggest a recipe for my favorite universal dough!
  • The recipe came to me a long time ago from Aunt Rosa, for which many thanks to her!
  • So let's get started, everything is very simple:
  • Melt the margarine.
  • Heat the milk.
  • If the yeast is fresh, then we dilute them in milk, if dry, we mix it with flour.
  • Mix milk, margarine, sugar, salt, eggs, sour cream and gradually add flour.
  • Knead the dough, soft, not sticking to your hands.
  • FSE.
  • We quickly sculpt pies, pies, and whatever you want)).
  • Put on a baking sheet, PUT IN A COLD OVEN, and bake at t 180g. 25-30 minutes.
  • We look in our oven.
  • Bon Appetit!
  • P.S. I knead the dough in a bread maker, "Pelmeni" mode for 10-15 minutes!

The dish is designed for

42-44pcs.

Time for preparing:

10 min. kneading + 25 minutes cutting + 25-30 minutes bakery products

Cooking program:

Manual / HP + oven

What about the time to raise the dough? Doesn't the dough need to rise?
CurlySue
40 grams of fresh yeast for 1 glass of milk ???
I put on this amount of liquid (and 1 egg) usually 6-7 grams of fresh yeast.
You still have about 1 cup sour cream (well, also liquid). Even if you double the amount of yeast, there will be 15 grams.
Didn't you confuse anything?
Trishka
olgdom26, that's the beauty of the recipe, that the rise is not needed.
Directly into the cold oven and baked goods.
Trishka
CurlySue, the recipe is verified.
The recipe is more than 20 years old, so about the yeast is fresh, but in the original recipe, this amount generally goes to 1/2 pack. After all, there is still 200g. margarine.
I am now putting in 2 tsp. from Xn and do not bother.

Fresh / dry yeast 40g. / 2h. l. from HP

Ksyusha, 2 hours Khlebopechkinsky l. dry yeast = 18 gr.

I’m thinking, can we get some fresh ones then?

Quote: Trishka
The recipe is over 20 years old, so the yeast is fresh

This is understandable, only then the yeast was not so vigorous ...
Trishka
Crochet, Inn well try, but "I don't answer for myself then."
I usually throw 2 chl from HP.
Try it then.
After all, there is a lot of things mixed in the dough and sour cream, and margarine, and ...
It seems to me that it will be hard for him to climb with so many things, and even without proofing.
He bribed me in due time with the fact that there was no hassle with climbs and so on. and so on, and kneaded into the oven.

oxanaoxane
I can imagine what will happen without proofing with such a fat dough ... Probably something like filled bricks. I won't even dare try.
Trishka
oxanaoxane, this recipe is over 20 years old, so it's time tested.
And to try or not, it's your right.

Trishka, I baked pies according to your recipe, I liked the dough. I took 900 grams of flour, just kneaded on the Pizza program (45 minutes) and immediately baked pies with apples. It turned out soft, mine really liked it. Today I also put this dough. Thanks a lot for the recipe.

oh, and I love such a dough, so that without any proofing there ..))) thanks, I'll take the recipe in the bookmarks! a 2 tsp. from HP - it's even not enough for such an amount of flour, especially since there is so much muffin ......... here is the whole bag of 11 g which, I think you can safely pour it ..))
Trishka
kavmins, Thanks for attention !
And I love these recipes, without problems.
And at the expense of yeast, I put 2 hours. l from Xn, it seems to me if more, then yeast will be felt.
Well, try it later. Good ?

I'm not particularly a baker yet, just learning. And I still have one universal dough - I make it on kefir, and it's not difficult and fast. While I tried to make pies out of it, pizza, very good. We don't like yeast-based dough in the family, so here's a yeast-free recipe. While everything is by hand, I only dream of a bread maker, I came here, at least take a closer look at the models and read the reviews))
Trishka
Qoalla, welcome to our friendly and homely warm site Khlepopechka!
And this recipe has probably lived for 20 years, and has never failed!
Try to cook it, it's not difficult there, mixed it, immediately stuck pies, or a large pie, and put it in the Cold Oven for baking, while the oven is heating up, the dough fits!
To me for you, if that!
Qoalla
Trishka, Thank you for your hospitality! And for the recipe and tips for it
Trishka
You are always welcome, if anything, please!

Ksyusha, I make yeast dough on kefir. For 500 grams of flour and 1.5 tsp. dry yeast +250 g kefir +50 g margarine or butter. But I like to knead the dough with my hands, although there is also cotton Panasonic. I just bastard from the process itself, when it begins to come to life right in the hands and becomes alive, airy! I add sunflower oil about 2-3 tbsp. l at the end of the batch.Ksyusha, your recipe is unique and I will definitely try it! The pies look very nice in the photo. This is a lifesaver when guests suddenly appear, or suddenly someone from home wants pies with sweet filling for tea! Thanks for such a dough!
Trishka
velli, Valyusha, thank you for your kind words, try it, this is really a quick dough, I love it, I often bake pies from it, my husband calls them "patches", he has one bite!

valentine, so issue your recipe separately. Maybe someone has kefir lying around, but such a proven recipe will come in handy 🔗

AlbinaAlbinochka, in my opinion, my recipe is not unique, it seems to me that there is already a dough on kefir on the site, but I have only been making it in my own way for many years. But so that the pies do not get stale in 1-2 days, I always add 1 tbsp to the dough. l starch.
Trishka
velli, Valyush, yes there may be many similar recipes, but there is no such thing, so we are waiting for a recipe ..

valentine, but say nothing to surprise. I took a note.
Even without an Internet, I put the dough without exact "glasses, grams" and baked and pleased my family. But thanks to the Internet I have already learned a lot and I think I will find out more
I wonder if you put 1 tbsp in bread. l. starch, it too will not harden longer? Valentina, maybe you know what you need to put in the dough so that it crumbles less?

AlbinaWhen I bake bread in a bread maker, I always put 2-3 tbsp. l. olive oil Extra Vergine Olio. Bread with it seems to me more dense and elastic or something. I don't add starch to the bread dough, because it is already soft on the second day, and even on the third. And kefir yes! half with water 50/50. Albina, I heard, but did not try it herself. Some add egg white to bread. I want to try it myself. In general, ask everything about the bread, I get it very tall and beautiful. At work, girls often ask me to bring them my bread and gulp it better than any cakes and cookies. "Gulp" is lovingly said.

valentine, I've been baking bread in a bread machine for over 20 years. I rarely get it hard and bad. Before visiting our favorite HP site, I always baked the same bread from the recipes that came with my HP. And after getting to know the Internet and my favorite site, I began to bake different breads. He, too, mostly turns out great (rarely not very much, apparently the stars go like this). It's just that mine are basically making such claims: bread dries quickly and crumbles more. Dries up why I also understand. Because mine apparently ate it well before. And now they sometimes "like on a diet" (this happens) and do not eat bread.
Therefore, from the message I got caught on the starch, thinking that maybe putting it down a little, then you can fix the situation.
I really tell my friends that the products have deteriorated a lot in comparison with previous years.

I don't like bread with olive oil, so I often put butter + sunflower oil. Approximately halved.
Natusya
Ksun, how good that I found your recipe! I'll try this weekend

Sesame
Ksyusha, 2 tbsp. l. sugar is probably not sweet at all, I feel my husband buit to be indignant
Trishka
Sesame, Marish, so it is universal, for any filling.
Maybe you can add more, but you need a sweet dough?
What are you going to bake for?
Sesame
Ksyusha, uzho baked and ate came from the garden, found your recipe and then she put 3 tbsp of sugar on the experiment. l. Wonderful miracle, not the dough I took away to bookmarks: rose: Yes, I did half the portion really.
Trishka
