Ingredients

Dried crayfish shells 10-15 pcs.
Butter 100 g
Water 1 l
Salt pinch

Cooking method

  • Butter made from crayfish shells.
  • Get live crayfish !! If the cancer has fallen asleep, then we do not use it. Rinse them well. Boil water with branches of green dill, parsley, dry dill seeds, allspice, bay leaf and sea salt. Take 2 - 2.5 times more salt than for broth. Dip crayfish in boiling water, bring to a boil and cook medium-sized crayfish for 20 minutes over low heat.

  • At the end of cooking, remove the crayfish, brush with oil for shine. Serve with beer, use crayfish necks to prepare various fish dishes or creamy sauces and soups.
  • Rinse the remaining shells and empty claws very well. Scrape right off the inside well! Dry the shells in the oven at 180 degrees for 15 minutes until dark red and aroma.
  • (I dried in a Philips air fryer. To prevent the light shells from flying from the air currents, in this case, you need to press down on the shells and claws with a saucer or lid.)

  • Cool the shells and crush them in a mortar to almost the point of dust.

  • Take 100 g of butter, add 2-3 tbsp. l. crushed shells and warm up, constantly interfering. As soon as the oil begins to fry, add 0.7-1 liter of boiling water, bring to a boil, boil for a minute, remove from heat and let it brew for 30 minutes.
  • Then the mixture must be filtered through a strainer. When the melted butter floats to the surface, you can add salt on top without stirring and put away in the cold. After a few hours, a hard layer of floating and frozen oil will appear on the surface of the saucepan. It must be removed, put into a jar and stored in the freezer.

  • By the way, butter with such a divine taste was served with fish and vegetable dishes at Russian noble feasts.

  • Using this oil, a classic recipe for German Leipzig sundries with crayfish tails and a certain classic set of vegetables is prepared.

Note

I got crayfish with not very red shells, next time I will dry it to a brighter color.
By the way, I think you can add some saffron when cooking.
