Buckwheat Pancakes from Saxony (Buchweizenpfannkuchen)

Ingredients

Buckwheat flour 5/8 cup
Wheat flour 1/4 cup
Milk 1 2/3 cups
Instant yeast 1/2 sachet
Salt 1 tsp
Egg 1 PC
Vegetable oil for frying
Garnish of your choice

Cooking method

  • To measure the ingredients, I used a set of American measuring cups (cup = 210 ml). I deviated from the recipe a little: Instead of dry yeast, I used fresh (10 g), added a tablespoon of sugar and 2 tablespoons of vegetable oil.
  • For frying I used Tefal pancake maker for 6 pancakes. Fried without oil.
  • So, pour buckwheat and wheat flour, salt, sugar into a bowl. Mix milk, yeast and egg in a separate bowl. We mix dry and wet ingredients, add vegetable oil, cover the dishes with a foil or bag and leave to rise for an hour.
  • After rising, the dough looks very appetizing: fluffy, with holes:

  • Preheat skillet / pancake maker and bake pancakes. The pancakes are tender, spongy, with a great buckwheat spirit and a ruddy crust.

  • These crepes can be served with either a sweet or savory side dish. We love with smoked fish, so I whipped homemade sour cream with horseradish and dill, on top - a salmon rose.

Why did I decide to display this recipe? Here's the story:
I have a friend who was born and lived most of his life in Bremen, Land of Bremen (Freie Hansestadt Bremen). The state of Lower Saxony (Niedersachsen) surrounds Bremen on all sides and culinary traditions are closely intertwined. He was surprised that many people know about the Bremen Town Musicians, but few people know that buckwheat pancakes are one of the national dishes in Bremen and in Lower Saxony. I have been baking these pancakes according to a friend's recipe for many years.

Some believe that the Bremen Town Musicians have nothing to do with this city since they did not get to Bremen ... Nevertheless, a monument to these wonderful animals was erected on the square in 1953 and is popular with tourists.
