Cooking method

  • Soon a bright holiday - Easter. Not a single festive Easter meal is complete without homemade cakes and sweets. In addition to the invariable Easter cakes and Easter, all kinds of pies, muffins, homemade gingerbread and cookies are baked. Each country has its own traditional recipes. In Germany, for example, hare-shaped cookies are baked. The hare in Germany is as much a traditional symbol of Easter as painted eggs. Housewives have long baked such funny cookies to please children: it was believed that these animals bring good children gifts for Easter.
  • What is Easter for the people of Germany:
  • “So, we have it like this: we go to bed, and while we sleep, the Easter bunny comes and lays eggs. But he always hides them very well. It is difficult to find them later. Sometimes the very next day, when Easter has passed, we find baskets with sweets. He hides them so well. " But where did the hare come from, why, contrary to nature, is it the hare that brings eggs in Germany on Easter? Here Christian and ancient pagan traditions have already been mixed. The hare is a symbol of fertility, in the year the hare brings up to 20 hares, so the hare was the main character of the spring feast of fertility even in pre-Christian times.
  • Beat butter and sugar until creamy.
  • Mix flour, salt, cinnamon and zest. Add to the egg mass.
  • Knead the dough. Refrigerate for 1 hour.
  • Roll out the dough, cut the cookies into shape (egg + ears), as well as legs. Bake in oven at 180 ° C until golden brown. Roasting time, depending on your cookie shape. Cool the cookies.
  • Beat the protein with the powdered sugar. Add lemon juice. Paint the glaze the color you want.
  • Place the icing in a bag, cut off a small corner and pour over the middle of the cookie, in the shape of an egg. Allow to dry. Then with the help of glaze, glue the paws to the liver.

Hares are just wonderful! Spring has blown!
What kind of glaze did you use? And what did they tint with? Very winning color
Of course, when you "fall" on a recipe of such a plan, I would very much like to see something like a master class ... Because I want to do it right away, photographs of the process help a lot not to waste time looking for technologies, but to start right away.
How do they do something about these hares?
What molds should I look for?
How much dye to add to this amount, I have never worked with it, so it is not obvious to me.
If you beat the egg white, will this icing work? Or is it so shiny after adding lemon juice? And where does the volume of whipped protein go? I am not a master in such things, therefore I am so interested in details. And I want to do for little relatives!
Thanks for the beauty on my monitor !!

Thank you so much!

Icing sugar is icing. The forum has a section - icing. Everything is clear there. The protein is not whipped, but simply mixed with powdered sugar. Food gel dyes (I have a Wilton for icing), but icing is also dyed with our gel dyes.I made the form like this - I took a metal round form for cookies, squeezed it slightly on the sides and cut out ovals. Then I took the shape of a chamomile flower, cut out the chamomile from the dough, cut off the petals from the chamomile and got ears. I put it on the oval, pressed them together a little and when baking, they joined. When I poured icing, I just went over the line on the ears to hold on.

Thank you, I will try to repeat!

That's why I clarified, because I already read something about icing from our girls and even tried to perform it, but I don't dare to show it!

I realized that bit by bit I don't have time to collect experience and knowledge of the art of confectionery, I think someday I'll go straight to the courses. And then I'll start consulting on my jambs in the topics. You approved me in my dream with your designs!

Thank you for such a good recipe, I will implement it for home!
