Spreewaelder Gurkensuppe

Ingredients

pork belly 500 g
bulb onions 3 pcs
fresh cucumbers 2 pcs
milk 350 ml
butter 50 g
White bread 100 g
salt, pepper, sugar, bay leaf

Cooking method

  • The Spreewald is a low-lying area in Germany, rich in river channels and floodplain meadows. Located in the federal state of Brandenburg. Spreewald's signature product is cucumbers. I suggest you try two popular dishes: Spreewälder Gurkensuppe and fried cucumbers (Schmorgurken) .
  • To prepare the soup, place the brisket, one chopped onion, pepper, bay leaf in the MB, pour a little water. Cook on the Simmering program for 1-1.5 hours.
  • Cut the remaining onions into cubes.
  • Melt butter in a frying pan, add onion and start frying. Sprinkle a little sugar on the onion and fry over low heat until golden brown.
  • Peel the cucumbers (remove the seeds if large), cut into cubes and add to the onion. Season everything with pepper, salt and flour.
  • Add a cup of boiled brisket broth and milk. Bring everything to a boil and cook for a few minutes.
  • Separate the brisket meat from the bones, chop finely and add to the soup.
  • Cut the white bread into cubes and fry with a little oil until golden brown.
  • Pour the soup into bowls, serve with croutons. Can be sprinkled with dill or parsley.
