Ingredients

butter at room temperature 210 g
yolk 3 pcs
crushed and fried pumpkin seeds (in dough) 80 g
wheat flour, I have 1c 320 g
marzipan 120gr
salt pinch
powdered sugar 100 g
lemon peel 2 tsp
whole pumpkin seeds for decoration
crushed pumpkin seeds (in cream) 70 g
nutella (for cream), I have chocolate + cream 300 g (per eye)
egg for lubrication 1 PC

Cooking method

  • It is not hard to imagine that several dishes can be prepared from pumpkin. But you have to be Austrian in order not only to fall in love with pumpkin, but to devote a real holiday to this vegetable. This is exactly what they do in Upper Austria, where Pumpkin Day is celebrated every year. And most of all, they value not pumpkin pulp, but its seeds and, of course, pumpkin oil. It is clear that seeds are added to bread, pies and cakes, but few people know that they are used to prepare an artificial tanning cream.
  • In Germany, pumpkin is equally loved, in Friedrichshain (Berlin) and Bamberg there are even restaurants called "Kürbiskern".
  • I decided to make soft shortbread cookies with pumpkin seeds.

  • Sift flour and mix with salt. Mix the butter with the yolks, icing sugar and lemon zest. Pour in the flour mixture and chopped fried seeds, pinch off the marzipan in small pieces (or put it in the freezer and grate it) and add to the dough:

  • We remove the dough for 1 hour in the refrigerator. I'm ahead of the question about baking powder - it's not in the composition. Cut off a small piece from the dough (the rest is in the refrigerator), roll it out 2-3mm thick and cut out the cookies, I have 3.5cm in diameter. We put it on the parchment with a knife, and so on until the dough runs out. Lubricate with an egg (I forgot) and bake in an oven preheated to 180g for 8 minutes. It turns out 3 trays.
  • For the cream, mix nutella and crushed seeds. I did not make the cream according to the recipe, I melted the chocolate "by eye" and added cold heavy cream to it, the mass thickened, I did not add seeds. Now we glue our cookies in pairs and decorate.

I took German Zentis bars in "METRO", 100g about 100r or a little with a penny ... it's true in chocolate))) I peeled it and ate little bitter almond oil in them, so I like them, otherwise there are such nasty ones)) ) but in general I did not like the composition, there are few nuts, it's easier to do it yourself! By the way, I wanted to write, you asked me about gravy boats! remember? I saw such in the advertising magazine "Lenta" look there, if still relevant!
