Ingredients

Buns 5 pcs (6 slices from a white loaf)

Egg yolks 4 things. ( 2 pcs.)
Cinnamon, vanilla sugar 1/2 tsp. (1/2 tsp.)
Lemon zest 1 pc (0.5 pc)
Baking powder + flour 1 tsp (3/4 tsp.)
Egg white 4 pcs (2 pcs)
Peeled almonds, finely chopped 100 g (50 g)
Forming fat and corn flour for dusting
Cherry 800 g (1 bag frozen)
Cherry liquor for impregnation my addition

Cooking method

  • Just a couple of weeks a year in the spring, Witzenhausen (in the north of Hesse in the Werra Valley) turns into a cherry blossoming garden, which attracts numerous tourists. It is in this place that the largest cherry orchards in Germany are located.
  • A second wave of tourists should be expected during the harvest season. They are attracted by the variety of varieties of cherries and cherries: heart-shaped, sour and sweet, golden and almost black, but most often shiny and red. Interestingly, Witzenhausen is the only city in the world where advertising brochures are issued for tourists that exude a cherry aroma when rubbed with an image of a berry. This city stands on the German "road of fairy tales". It was here, in the north, that the Hesse-born brothers Grimm collected a large number of fairy tales.
  • The area is ideal for growing cherry trees. The Meisner mountain range does not allow cold winds to pass through, but it also does not obscure the sun's rays.
  • In the Roman Empire, the cherry, which in the local dialect is called "Cespernus", was brought by Lucullus himself from the city of Kerasus on the Black Sea - from this toponym comes the name of cherry in European languages.
  • In Vitzenhausen, the Queen of Cherries is chosen every year, whose duty is to lead the Cherry Festival - a harvest festival.
  • Now ask yourself, what is the most delicious way to absorb sweet and sour, juicy berries, and where do the most delicious cherries grow ?! And is it not gastronomic happiness when you can pick a handful of cherries from a neighbor (they are definitely tastier from him!) And eat them, spitting out the bones, without hesitation, anywhere!
  • For the Germans, such a relaxed way of eating cherries grew into an almost sports competition. Wherever cherries grow in abundance, cherry-pit targeting competitions are organized for fun or in earnest.
  • And now the interesting facts. Since 1974, the world championship in spitting cherry pits has been held. In Germany, the question of the trajectory of cherry pits ejected from the mouth is taken seriously. It is no coincidence that the world record for spitting bones was set by the German Oliver Cook from Hürttenwald (21.71 m). The German championship in 2003 was won by a resident of Witzenhausen, Thomas Bryubach (24.33 m).
  • I don’t know who got into the habit of holding bone-spitting competitions, the Germans among the Americans, or vice versa, but in July, the American state of Minnesota also hosts a competition. According to the rules of the Cherry Seed Club founded there, its members are also obliged to do something stupid at least once a month.

  • - Cut the buns or white loaf into thin slices. Place on a baking sheet and spread the oil shavings on top.Bake in a preheated oven until golden brown (I baked in a Princess pizza oven). Place the croutons in a bowl and cover with milk. It took me a third more milk, so look at the structure of the bread mass - the bread must be completely soaked, soft and moist so that the pudding does not turn out to be dry.

  • - Whisk butter with sugar and yolks until fluffy. Add the cinnamon, lemon zest and baking powder mixed with a spoonful of flour and mix thoroughly with the soaked bread. Add the dried pitted cherries.
  • - Whisk the whites into a firm foam and gently stir into the dough.

  • - Grease an ovenproof dish, sprinkle with chopped almonds, pour the dough into it. Sprinkle the remaining chopped almonds over the dough and bake in a preheated oven at 175 degrees for about 50 minutes. The time depends on your oven - control the top crust and check the readiness with a splinter - no crumbs should stick to it. The recipe pudding is served in a mold.

  • My pudding lagged well behind the molds as I greased with butter and sprinkled with cornmeal.
  • The little puddings felt a little dry, and I poured cherry liqueur on them, which immediately absorbed. Literally a tablespoon.
  • The best taste and normal moisture content of the pudding came out in a larger mold. I also poured it over with liqueur and served with whipped cream mixed with sour cream.

Note

I liked the recipe, in principle, did it twice. The taste is highly dependent on the quality of the bread. From home, a looser and more airy structure is obtained. Pictured is a bakery pudding.

It was completely unclear from the recipe in the German book which buns were meant and how much they at least weigh

I also think that you can do without spreading the bread with butter before drying. This oil can be added to the dough.

I can recommend the recipe, if necessary, to dispose of bread and a large amount of free berries.
