Cooking method

  • This bread is based on two recipes Malt bread with dark beer and
  • Malt Bread by Natali06 (just the opposite)... These are two loaves. which I bake often. So I decided to combine them together.
  • Let's get started.
  • Leaven... I have a starter culture of 100% moisture. So I overfed her twice. The first time is 10 * 10 * 5, and the second time is 25 * 50 * 25.
  • Dough.
  • Two types of dough can be kneaded in parallel if you have a bread maker and a combine. You can take turns, which I did. I was kneading in a bread maker. First, I kneaded a light dough. I mixed all the ingredients, as required by the instructions of the bread maker, and began kneading on the dough mode (20 minutes). After five minutes of kneading, I added salt. She took out the dough, rounded it and put it to ferment. I kneaded a dark dough. The algorithm is the same. I put it on fermentation. The light dough will ferment longer for 20 minutes. Not scary.
  • Bread Two sourdough beersBread Two sourdough beers... Fermentation. After 45 minutes, after placing the second dough, stretch dough 1 and 2 and fold. Leave on for another 45 minutes. The photo shows the dough at the beginning and at the end of fermentation before cutting.
  • Bread Two sourdough beers We roll out the light dough into a layer, and put the dark dough rolled into the layer on it. We roll it up with a roll, pressing each turn slightly, pinching the edge.

  • Lately I've been baking all my bread in a bowl with a lid. Therefore, I heat the dishes with a lid together with the oven to 240 degrees. I turn the spaced bread over onto baking paper, make an incision and put it in a dish. I cover it with a lid. Bake, covered for the first 20 minutes. Reduce the temperature to 180 degrees, remove the lid and bake until tender. I have a total baking time of 35 minutes.
  • We take it out, let it cool, cut it and enjoy it.
