Pumpkin buns with dried cranberries

Ingredients

Dough:
Pumpkin puree (I have it steamed) 2 250 g
Milk 80 g
Water 80 g
Softened butter 60 g
Wheat flour 400 g
Whole grain wheat flour 200 g
Dry yeast (Saf-moment) 5 g
Sugar 60 g
Salt 1h l.
Vanillin 1 \ 4h. l.
Powdered milk 30 g
Corn starch 10 g
Filling:
Sugar 100 g
Cardamom green 10 boxes
Dried cranberries 100 g
Butter 50 g

Cooking method

  • Heat water and milk to 37C. I had mashed potatoes from the refrigerator, so I put it to heat.
  • Add all other ingredients and knead the dough. Kneading in Thermomix for 7 minutes, Spikelet mode. The dough is soft, sticky.
  • Grease the table and hands with oil, lay out the dough, fold in an envelope, put in a container. oiled, leave at 30C for 30 minutes.
  • Then knead the dough, fold again, return to the container and leave for 60 minutes.
  • Then knead the dough, divide into 2 parts. Round each and leave for 10 minutes.
  • Remove the cardamom seeds from the boxes, grind in a mortar, sift into sugar, mix.
  • Then roll each into a rectangle, grease with melted butter (leave a little), sprinkle with sugar and cranberries, roll up, cut into portions.
  • Put on a baking sheet, cover, leave for 40 minutes.
  • Before baking, brush with the remaining butter and sprinkle with sugar.
  • Bake in an oven preheated to 200C. The exact time depends on your oven. I have 40 minutes, because I baked on two baking trays and swapped them.

  • These rolls interested me with a combination of CH flour, pumpkin, dried cranberries, and I also have cardamom. It turned out very tasty and aromatic.

But I had some minor changes. Since I don’t have flour, I poured in / s.And the cranberries are over. So I put in the raisins. And the rest is everything like yours. But no, I'm lying ... I screwed up. I forgot I was baking half the portion. I shouldn't have divided the dough in two. But I kind of do everything according to the recipe ... Divided, I got thin rolls. I was puzzled, but I cut such columns ... It turned out to be tiny buns. Next time I will do everything as it should be - we will buy cranberries and CZ flour.
