pressed yeast 20 g

butter at room temperature 125 g
milk 125 g
milk for coating
pearl sugar (I have regular sugar) for sprinkling

Cooking method

  • Flachswickel is a typical Swabian pastry, the yeast dough is formed into knots and wrapped around the ends.
  • Warm the milk a little with sugar, dissolve the yeast and add butter, it will soften a little more, but will not melt. We mix the rest of the ingredients, knead the dough for a couple of minutes, it will be dense.
  • Swabian braided buns (Schwabische flachswickel)
  • We are waiting for an increase in volume, knead, divide the dough into pieces of about 40g, form finger-thick flagella with our hands, wrap the ends and put them on a baking sheet. Lubricate with milk and sprinkle with sugar. We wait 20-30 minutes until the buns come up, and then bake in an oven preheated to 180g for about 20 minutes.
