Ingredients

Chum salmon (or any red fish) fillets on the skin 4 servings
For the marinade: lemon (juice and zest) 1/2 pc
Salt 1 tbsp. l.
Sugar 1 tsp
Dried or fresh herbs (I have dill, parsley, Provencal herbs) 2 tbsp. l.
Olive or odorless vegetable oil 100 g
Spices randomly (I have white pepper, a little coriander) 1/2 tsp
For a fur coat: large potatoes 2 pcs
dried or fresh mushrooms 4 things
large onion 1/2 head
Ricotta cheese 2 tbsp. l.
Cheese 100-200 gr

Cooking method

  • Quite by accident I bought a large, whole chum salmon. I cooked it for the first time. I tried it before and it seemed to me dry. Therefore, after rereading the sea, I realized that when pickling it, you need to use more oils.
  • I didn’t take off my skin, because I adore its crispy skin. But for this I had to clean it from the scales. But what can't you do for the sake of your loved ones! For example, mistletoe even peeled chicory! Small!
  • I wanted to cook fish right away with a side dish - so that the table would not be clogged with plates later. It was very necessary to adapt somewhere four thawed boletus caps Chum salmon (or any red fish) under a potato fur coat... I decided to add it to a fish coat. The presence of mushrooms dyed the fur coat a bit dark, but the taste !!!!
  • Let's start cooking in the evening. Prepare the marinade - mix all the ingredients. Four ready-made steaks are well coated with marinade. I put it in a plastic tray (I poured some olive oil on the bottom) skin side down and up on top of each other. The fish should be well coated with marinade and oil. I covered it with a lid and put it in the refrigerator.
