According to the instructions, it is recommended to use powdered milk, since it means that you can leave HP on the timer until 13 (if I'm not mistaken) hours, and during this time fresh milk can become, let's say, stale. They are for fidelity. In fact, you can put ordinary, wet milk, and kefir, and everything that is lying around in your refrigerator. Although I would really not leave fresh milk for many hours.

2. I personally have not used liquid sucrasite, but I see no reason not to use it.

3. Rye wallpaper flour (whole, "full" in literal translation) - קמח שפון מלא. It is sold in the Mega, Shupersal, etc. chains. And in Russian stores (not all, however) you can buy both peeled and seeded rye. there are recipes with different types of rye flour. But I want to warn you: in my experience, our dear Morphy Richards cannot properly knead the dough, where rye whole more than 70%. She just doesn't pull.
