Chocolate Beet Cake (Dairy Free)

Ingredients

flour 275 g
beets (boiled) 375 g
vegetable oil 300 ml
eggs 5 pieces
baking powder 3 tsp
cocoa powder 100 g
sugar 375 g
vanilla sugar 1 sachet
salt 1 pinch
sah. powder and / or cocoa for decoration

Cooking method

  • Very simple and fast. No dairy products, which is sometimes needed due to allergies, etc.
  • The cake turns out to be quite light, chocolatey (but in moderation), tasty on its own, but also has the potential for further refinements in the form of seasonings, coffee or some kind of thick jam layer or something like that.
  • I baked in a rectangular shape 30 cm long (2.2 liters) - it was just right. Rises about 2 times.
  • I took ready-made beets in vacuum packaging
  • 1. Prepare the mold as usual - grease and sprinkle with breadcrumbs or flour. Preheat the oven (175 degrees or 150 if ventilated)
  • 2. Make mashed potatoes from beets and butter with a blender (pre-cut the beets) and set aside.
  • 3. Beat eggs one by one with a whisk (best of all, of course, in a mixer). Then gradually add the rest of the ingredients, in the end - beet-butter puree. Continue stirring at low speed until the dough is smooth.
  • 4. Put the dough in a mold and bake for about 1 hour 15 minutes (depends, as always, on the oven and the mold)
  • 5. Allow to cool in the form for about 10 minutes (I jumped out immediately and without problems), put on a dish, sprinkle with powdered sugar and / or cocoa.

on holidays I baked the same cupcake in a Nordic Ware-form, slightly recalculated the recipe. For some reason it turned out tastier than in the "coffin".
Maybe because this shape makes the cake softer in the middle. In short, now I will only bake this way :-)

boiled beets 450 gr
rast. oil 360 gr
eggs 6 pcs
baking powder 4 tsp
cocoa powder 120 gr
sugar 430 gr
van. sugar 1.5 sachets
2 pinches salt

The rest is as usual. Baked for about a little over an hour, in normal mode without blowing. After 10 minutes of cooling, he got out of the mold :-)

Thank you for recounting the recipe upwards! My shape is the same in volume as the Nordic one. It should work well.
I baked beet pie using a different recipe: with walnuts and without butter. Yes, and in that recipe, the yolks and egg whites are separately beaten.
My family completely rejected him. We must, somehow, try to bake your version. It should be interesting.
