Ingredients

Flour 350 g
Cocoa powder 40 g
Sugar 250 g
Soda 1 tsp
Salt Pinch
Olive oil 240 g
Buttermilk or kefir 240 g
Eggs (large) 2
Wilton Red Food Color Gel 2 tbsp. l.
White or apple cider vinegar 1 tsp
Vanilla extract 1 tsp
Cream:
Cottage cheese 340 g
Butter 115 g
Powdered sugar 100 g
Vanilla extract 2 tsp

Cooking method

  • There are many different recipes for the popular all over the world "Red Velvet" biscuit on the Internet. This cake is considered an American classic. The history of the recipe goes back to the 19th century and is appreciated for the special "velvety" texture of the biscuit. But at that time it was not yet red. During the Great Depression, sales of pastry shops fell, and confectioners showed some cunning - they added red. Since then, many pastry chefs have even organized real competitions to achieve the "true red" color.
  • I found this recipe by visiting the blog of the Spanish culinary specialist Roza Arda. I chose it, because Roza uses the Nordic Ware "Heritage" mold, and I had a fix idea at the sight of the Nordic "Rose" mold - to bake "Red Velvet" in it.
  • The author of this recipe uses Thermomix, I also decided to prepare a mixture in it, but, of course, you can use any mixer, choosing the right speed and time))
  • 1. Prepare the mold by greasing it with butter (I use the "secret method" that I posted in the topic about Nordic Ware molds).
  • 2. Preheat oven to 190 * C.
  • 3. Place all dry ingredients in a bowl, turn on the first speed for one minute, lay out and set aside.
  • 4. Pour out all wet ingredients and stir for 30 seconds at speed 3. Done. Leave the mixture in a bowl.
  • 5. Switch on speed 3 without setting the time. Add dry ingredients with a spoon, it will take 1-2 minutes, check that everything is well mixed. Turn off.
  • 6. Pour the mixture into the prepared mold and tap the filled mold several times on a hard surface (you can lay a folded towel) to remove bubbles.

  • 7. Place the dish in the oven. Bake for 45-50 minutes at 175 * C.
  • 8. After the oven, let stand for 10 minutes (required), after 10 minutes turn onto the wire rack and cool completely.
  • 9. The cooled cake can be brushed with icing sugar (to add shine).
  • 10. Serve cheese cream with the biscuit (mandatory option).
  • The cream is prepared very simply - put all the ingredients in a bowl and beat with a mixer until smooth. It will take 5-7 minutes. There is one rule - very cold curd cheese and very soft butter. Following it, you will get an excellent cream with a delicate texture and taste))

Note

You can make buttermilk yourself by adding 1 tbsp. l. lemon juice, stir and let stand for 10 minutes at room temperature.

I added 1 tbsp. l. food coloring, instead of the prescribed 2 tbsp. l., it seemed to me enough.

The recipe is also ideal for "Elegant Heart", "Heritage" forms))
