Chocolate cupcake with curd filling for Nordic Wear tins (Harvest)

Ingredients

premium flour 180 g
cocoa (powder) 60 g
soda 0.5 tsp
butter (softened) 180 g
granulated sugar (in the recipe 350 g) 300 g
egg 4 things.
bitter chocolate 100 g
vanilla sugar 1 tsp
kefir (according to the recipe 1/2 cup + 2 tbsp. l.) 130 g
low-fat yogurt (in the recipe 1/8 cup, I just increased the amount of kefir)
filling
cottage cheese (cream cheese) 170 g
egg 1 PC.
powdered sugar 1 tbsp. l.
vanilla sugar 0.5 tsp

Cooking method

  • In a separate bowl, combine flour, cocoa and baking soda. Melt the chocolate.
  • Beat butter at room temperature with sugar until fluffy.
  • Add eggs one at a time while whisking the butter mixture.
  • Add melted chocolate and vanilla sugar.
  • Gradually add the flour mixture in three steps, alternating with kefir.
  • Mix everything thoroughly.
  • Prepare the filling.
  • Combine cottage cheese, egg, icing sugar and vanilla sugar until smooth.
  • Put part of the dough into a pre-lubricated and lightly dusty cocoa mold so that it covers all the protruding parts of the mold, then lay out the filling, preferably in the center, making sure that the filling does not touch the walls of the mold. Put the remaining dough on top. The filled dough filled the entire mold. It rose during baking, but nothing came out. We bake at 180 degrees. within 60 - 70 minutes, check the readiness with a wooden skewer, if necessary, increase the baking time.

Cupcake for chocolate lovers, too chocolate for my taste, next time I will reduce the amount of cocoa. But the curd filling turned into the most delicate soufflé. Homemade cottage cheese filling, soft and homogeneous, without grains.

PS The recipe for this cake was attached to the "Harvest" form, recommend caramel sauce:
1/3 cup heavy cream (for whipping)
1 cup caramel (crush)
1/2 cup chopped pecans

Melt the caramel together with the cream in a steam bath, serve the ready-made cake with caramel sauce and garnish with chopped nuts

Oksana, the crack has formed exactly along the contour of the filling, but it is not through. Apparently, the filling began to burst, because of this there was a crack, and the dough was still too much, I stuffed everything into the mold, but I had to define a couple of tablespoons in another mold
